Tips for success

For the best flavor, use freshly shredded cheddar cheese rather than pre-shredded bags, which often contain anti-caking agents that can affect melting.

If you have time, shred a block of sharp cheddar yourself—it will melt more smoothly and taste fresher. Additionally, consider using low-sodium cream of onion soup to control the salt level, especially if you're watching your sodium intake.

This recipe is incredibly forgiving. If you're short on time, you can cook it on HIGH for 2 to 3 hours instead of on LOW, but the chicken may be slightly less tender.

For a thicker sauce, remove the chicken and shred it, then whisk a cornstarch slurry into the sauce and let it cook for an additional 10 minutes. This is an optional step if you prefer a thicker consistency.

Variations

  • Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden, then layer them with the chicken and beans. The earthy flavor pairs beautifully with the cheddar sauce.
  • Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a diced jalapeño with the soup for a subtle heat that balances the creamy richness.
  • Bacon Twist: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the top before serving. The smoky flavor adds a new dimension to the dish.
  • Herb Infusion: Stir in 1 teaspoon of dried thyme or rosemary with the soup. These herbs complement the chicken and green beans without overpowering the cheddar.

Storage and make-ahead

Fridge
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in the microwave or on the stovetop over medium heat, stirring occasionally, until warmed through.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently in the microwave or on the stovetop, adding a splash of chicken broth or water if the sauce has thickened too much.

You can prep the ingredients the night before: trim the green beans, measure the cheese, and cube the butter. Store each component separately in the refrigerator. In the morning, simply layer everything in the slow cooker and set it to cook. This makes the recipe even more convenient for busy mornings.

Serving ideas

Serve this creamy cheddar green bean chicken over steamed jasmine rice for a complete meal. The rice soaks up the rich sauce and provides a neutral base that lets the flavors shine.

You can also serve it over egg noodles, mashed potatoes, or with crusty bread for dipping. A simple green salad on the side adds freshness and balance.

For a little extra flair, garnish each plate with chopped fresh parsley or chives. If you like a bit of heat, a sprinkle of red pepper flakes or a dash of hot sauce can elevate the dish.

This recipe is hearty enough to stand alone, but it also pairs well with roasted vegetables or a side of crusty rolls.

Frequently asked questions

Can this recipe be made with chicken thighs instead of breasts?
Yes, boneless skinless chicken thighs work well. They are more forgiving and stay moist even if cooked a bit longer. You may need to increase the cooking time by 30 minutes to ensure they are tender enough to shred.
How can the sauce be thickened if it is too thin?
If the sauce is thinner than desired after shredding the chicken, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the slow cooker. Let it cook on HIGH for 10-15 minutes until thickened.
Can frozen green beans be used instead of fresh?
Absolutely. Add frozen green beans directly to the slow cooker without thawing. You may need to extend the cooking time by about 30 minutes to ensure they are tender.
Is it necessary to brown the chicken before adding it to the slow cooker?
No, browning is not required. The chicken will cook fully and become tender in the slow cooker. However, browning can add extra flavor, but it is an optional step.
Can this dish be made dairy-free?
To make it dairy-free, use a dairy-free condensed cream of onion soup, dairy-free shredded cheddar, and a plant-based butter substitute. Check labels to ensure all products are certified dairy-free.

Slow cooker filled with creamy cheddar chicken and green beans, bubbling and golden

Ingredients

  • 3 lb boneless skinless chicken breasts
  • 1 lb fresh green beans, trimmed
  • 1 can (10.5 oz) condensed cream of onion soup
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp butter
  • steamed white jasmine rice, for serving

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker in a single layer. Scatter the trimmed green beans around and over the chicken. Spoon the condensed cream of onion soup over the top, spreading it slightly to cover some of the chicken and beans.
  2. Sprinkle the shredded sharp cheddar cheese evenly over the top of the soup and chicken mixture. Dot with the butter, placing small pieces around the surface.
  3. Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is tender and easily shreds. The internal temperature of the thickest part of the chicken should reach 165°F (74°C).
  4. Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir everything together so the sauce coats the chicken and green beans evenly.
  5. Spoon the creamy chicken and green bean mixture over steamed jasmine rice on individual plates. Serve hot.
