Before you start

Before beginning, ensure the oven is fully preheated to 375°F (190°C). Thaw the frozen vegetables completely and pat them dry with a clean paper towel to remove any ice crystals.

If the shredded chicken is cold from the refrigerator, let it sit on the counter for about 15 minutes to reach room temperature, which helps the entire dish heat through more uniformly during the baking process.

Ingredients at a glance (4)
  • 3 cups shredded cooked chicken
  • 2 cups frozen mixed vegetables, thawed
  • 2 cups creamy chicken sauce, store-bought or made ahead
  • 1 package cheddar biscuit dough, store-bought or made ahead

Instructions

Filling Preparation

  1. Prepare the Filling
In a large mixing bowl, combine the shredded cooked chicken, thawed mixed vegetables, and creamy chicken sauce. Stir until the ingredients are thoroughly incorporated and evenly coated with the sauce. Ensure the mixture is consistent throughout before transferring it to the baking dish.
Look for The mixture should look thick and creamy with no dry spots.
Tip If the sauce is too thick, add a splash of chicken broth to loosen it slightly.

The mixture should be thick, uniform, and well-seasoned. Check that all ingredients are evenly distributed so that every portion receives a balanced amount of chicken and vegetables. The consistency should be spreadable but not runny.

Assembling the Bake

  1. Assemble the Bake
Spread the chicken and vegetable mixture into the bottom of a 9x13 inch glass baking dish. Even out the top with a spatula. Arrange the portions of cheddar biscuit dough evenly over the top of the filling to form a crust. Make sure the biscuits are spaced slightly to allow for even rising.
Look for The dish is filled evenly and the biscuit dough covers the surface.
Tip Press down lightly on the biscuit dough to ensure it stays in place.

The filling should be spread into an even layer to ensure consistent cooking.

The biscuit dough should be arranged with enough spacing to allow them to rise and expand without becoming a single, dense mass. Ensure the edges of the dish are clean.

Baking to Perfection

  1. Bake and Serve
Place the dish into an oven preheated to 375°F (190°C). Bake until the filling is bubbling and the cheddar biscuits are golden brown and cooked through, reaching an internal temperature of at least 165°F (74°C) for the poultry. Remove from the oven and allow to rest for 5 minutes before serving.
Look for The biscuits are golden brown and the sauce is bubbling around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cover the top loosely with foil if the biscuits brown too quickly before the filling is hot.

The surface should be deep golden brown, and the sauce must be visibly bubbling at the sides of the dish. Check that the biscuits are firm to the touch and the internal temperature of the filling has reached 165°F (74°C).

Common mistakes

Avoid overfilling the baking dish, as the filling needs space to bubble without overflowing into the oven. Do not skip the resting time, as the sauce needs a few minutes to settle and thicken after coming out of the oven.

Also, ensure the biscuit pieces are not too thick, or they may remain doughy in the center while the exterior browns too quickly.

How to tell it’s done

The pot pie is done when the cheddar biscuits are puffed, golden brown, and cooked through in the center.

The filling should be actively bubbling around the edges of the dish, and the internal temperature of the chicken mixture should reach at least 165°F (74°C). Allow the dish to rest for 5 minutes before serving to let the sauce thicken slightly.

  • Poultry: 165°F (74°C) in the thickest part
