Tips for success
For the best flavor, use a good-quality sharp cheddar and shred it yourself from a block; pre-shredded cheese often contains anti-caking agents that prevent it from melting as smoothly.
If you prefer a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 30 minutes of cooking. This will help it cling to the chicken and potatoes more decadently.
To make this recipe even easier, you can use frozen chicken breasts directly in the slow cooker—just increase the cooking time by about 1 to 2 hours on LOW.
However, if you use frozen chicken, be sure to check that it reaches 165°F (74°C) before serving. The dish is also delicious with a sprinkle of chopped fresh parsley or chives on top for a pop of color, though the video does not include them.
Variations
- Add Vegetables: Stir in 2 cups of frozen peas or a bag of baby carrots along with the potatoes for extra color and nutrition. The vegetables will cook in the sauce and become tender, adding sweetness and texture to the dish.
- Use Chicken Thighs: Substitute boneless skinless chicken thighs for the breasts. Thighs are more forgiving and stay moist even if cooked a bit longer. Shred them the same way, and enjoy an even richer flavor.
- Make It Spicy: Add a minced jalapeño or a pinch of red pepper flakes along with the soup for a subtle kick. The heat will balance the creamy cheddar and make the dish more exciting for spice lovers.
- Creamy Mushroom Twist: Sauté 8 oz of sliced mushrooms in a little butter until golden, then add them to the slow cooker with the soup. This deepens the mushroom flavor and adds a hearty, earthy note that pairs beautifully with the cheddar.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or in a saucepan over medium-low heat, stirring occasionally, until hot.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; when reheating, add a splash of chicken broth or water to loosen it to the desired consistency. Reheat gently in the microwave or on the stovetop over medium-low heat, stirring occasionally, until heated through.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook as directed. You can also cook the entire dish, then refrigerate it for up to 4 days; reheat individual portions as needed.
Serving ideas
Serve this creamy cheddar chicken over steamed jasmine rice, as shown in the video, to soak up every bit of the luscious sauce. The rice provides a neutral base that lets the cheesy, savory flavors shine.
For a lower-carb option, serve it over cauliflower rice or alongside a simple green salad. The dish is also wonderful with crusty bread or dinner rolls for dipping into the sauce.
For a complete meal, add a steamed vegetable like broccoli or green beans on the side. The richness of the cheddar sauce pairs well with something fresh and crisp.
You can also garnish with a sprinkle of black pepper or a few chopped chives for a touch of color and freshness. This is a hearty, satisfying dinner that the whole family will love.

Creamy Cheddar Baby Potato Chicken Crockpot Dinner

Ingredients
- 3 lb boneless skinless chicken breasts
- 2 lb baby Yukon Gold potatoes, halved
- 1 can (10.5 oz) condensed golden mushroom soup
- 2 cups shredded sharp cheddar cheese
- 2 tbsp butter, cut into small pieces
- steamed jasmine rice, for serving
Instructions
- Place the chicken breasts in the bottom of a 7-quart slow cooker in a single layer, slightly overlapping if needed. Scatter the halved baby potatoes around and between the chicken pieces. Pour the condensed golden mushroom soup evenly over the top, spreading it to cover as much of the chicken and potatoes as possible.
- Sprinkle the shredded cheddar cheese evenly over the top of the soup-covered chicken and potatoes. Dot with the butter pieces. Do not stir; leave the cheese and butter on top to melt and create a creamy sauce as the slow cooker does its work.
- Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender and cooked through and the potatoes are fork-tender. The sauce will bubble gently around the edges. Do not lift the lid during the first 3 hours of cooking to keep the heat steady.
- Once the chicken is cooked through, remove the breasts to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker and stir gently to combine with the sauce and potatoes. Let the mixture sit for 5 minutes so the sauce thickens slightly.
- Spoon the creamy chicken and potatoes over steamed jasmine rice in bowls or on plates. The sauce should be thick and creamy, coating the chicken and potatoes. Serve hot, with extra cheddar on top if desired.
