Before you start

Before beginning, ensure all ingredients are measured and ready. Set the cream cheese out on the counter about an hour before starting so it reaches room temperature.

Clear sufficient space in the refrigerator to accommodate the square baking dish. Have an electric mixer and clean bowls ready for the whipping process, as cold bowls can sometimes help the cream whip up faster.

Ingredients at a glance (6)
  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1/2 cup caramel sauce

Instructions

Crust preparation

  1. Prepare the crust
Combine the graham cracker crumbs and melted butter in a medium bowl. Stir until the mixture resembles wet sand. Press the crumbs firmly and evenly into the bottom of the square glass baking dish to create a compact base.
Look for The crumbs should hold together when pressed against the side of the dish.
Tip Use the back of a measuring cup or a glass to press the crust down firmly for an even finish.

The crust should be evenly distributed across the bottom of the dish. It should look dark and moist from the melted butter, and it should feel solid and packed tight against the glass. If loose crumbs are visible, use a flat-bottomed object to press them down further until the entire surface is uniform and cohesive.

Filling creation

  1. Prepare the filling
In a large bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and fluffy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.
Look for The mixture should be light, airy, and free of any lumps.
Tip Ensure the cream cheese is fully at room temperature to avoid lumps in the final cheesecake texture.

The filling must be perfectly smooth and creamy. When the whipped cream is folded in, the final mixture should look like a thick, white mousse. There should be no streaks of cream or lumps of unmixed cream cheese. The consistency should be thick enough to hold its own weight when transferred to the baking dish.

Final assembly

  1. Assemble and chill
Spread the cheesecake filling evenly over the prepared graham cracker crust. Smooth the top with a spatula. Drizzle the caramel sauce generously over the surface. Refrigerate the cheesecake for at least 4 hours, or until set, before slicing and serving.
Look for The cheesecake is set when it feels firm to the touch and does not wobble in the center.
Tip For clean slices, wipe the knife with a hot, damp cloth between each cut.

The top of the cheesecake should be level and smooth. The caramel drizzle should be applied in an artistic pattern, coating the surface without drowning it.

After chilling, the entire dessert should look pristine, with clearly defined layers visible through the sides of the glass dish, signaling it is ready to be portioned.

Common mistakes

A common mistake is failing to whip the heavy cream to stiff peaks, which results in a runny filling that will not set properly.

Another error is neglecting to press the graham cracker crust down firmly, which causes the base to crumble when the cheesecake is lifted. Ensure the caramel is drizzled only after the filling has been smoothed to maintain the clean, layered aesthetic.

How to tell it’s done

The cheesecake is done when the filling has completely set and no longer appears liquid or soft in the center. Use a clean finger or the back of a spoon to gently press the surface; it should feel firm and hold its shape.

If the center feels soft or moves too much, return it to the refrigerator for an additional hour before attempting to slice.
