Tips for success

To achieve the ultimate glossy texture, always reserve a cup of the starchy pasta water before draining your rotini.

If your cheese sauce becomes too thick or begins to look dry after mixing in the pasta, a splash of this warm water will emulsify with the fats, instantly restoring a silky, restaurant-quality coating.

Adjust the heat level of this dish by carefully selecting your Cajun seasoning. Some commercial blends are exceptionally salty or heavy on cayenne pepper.

Start with the recommended tablespoon, but feel free to adjust the quantity or add a pinch of smoked paprika if you prefer a deeper color with less intense heat.

Variations

  • Cajun Chicken and Sausage: Add diced boneless chicken breast to the skillet along with the sausage, ensuring it cooks to a safe internal temperature of 165°F (74°C).
  • Vegetarian Cajun Pasta: Swap the sausage for sliced mushrooms, bell peppers, and zucchini, sautéing them until tender before adding the spices and cream.
  • Seafood Cajun Pasta: Incorporate peeled shrimp during the final minutes of simmering the sauce, cooking them until pink and opaque throughout.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to three days.
Freezer
Freezing is not recommended as the dairy-based cream sauce will likely separate and become grainy upon thawing.
Reheat
Reheat gently on the stovetop over low heat, adding a splash of milk or broth to restore the creamy consistency.

Allow any leftover pasta to cool completely at room temperature for no more than two hours before transferring it to an airtight container. Store the container in the refrigerator.

Because pasta absorbs liquid as it sits, the sauce will thicken significantly overnight, but it can be easily revived during the reheating process.

You can prep this recipe ahead by slicing the sausage and grating the cheeses a day in advance. You can also boil the pasta ahead of time, toss it with a teaspoon of olive oil to prevent sticking, and store it in the fridge.

When ready to serve, simply sear the sausage, build the sauce, and toss in the pre-cooked pasta.

Serving ideas

Serve this rich and creamy dish directly from the warm cast iron skillet for an inviting, family-style presentation. Pair it with a crisp green salad tossed in a light vinaigrette or some steamed green vegetables like broccoli or green beans to balance the decadent, spicy flavors of the cheese sauce.

Warm garlic bread or crusty French bread makes an excellent accompaniment, perfect for scooping up any extra velvety Cajun sauce left on the plate. Offer additional grated Parmesan cheese and red pepper flakes at the table so guests can customize the richness and spice level to their liking.

Frequently asked questions

Can milk be used instead of heavy cream?
Heavy cream is highly recommended because its high fat content prevents the sauce from curdling when mixed with acidic spices and melted cheese. Milk or half-and-half may split.
How is a grainy cheese sauce prevented?
Avoid using pre-shredded cheese, which contains starch coatings. Grate the cheese from a block and melt it over low heat, stirring constantly to ensure a smooth emulsion.
Is this dish very spicy?
The spice level depends entirely on the brand of Cajun seasoning used. Reduce the seasoning to two teaspoons for a milder flavor, or increase it for more heat.
Can gluten-free pasta be used?
Yes, any sturdy gluten-free short pasta like rotini or penne works well. Be careful not to overcook it, as gluten-free pasta can become mushy quickly.

Creamy Cajun Sausage Pasta Skillet in One Pan

A rustic cast iron skillet filled with creamy Cajun sausage pasta, garnished with fresh parsley.

Ingredients

  • 1 tbsp olive oil
  • 12 oz raw andouille sausage, sliced into 1/2-inch rounds
  • 8 oz rotini pasta
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley, for serving

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until it reaches an al dente texture. Drain the pasta thoroughly in a colander, reserving about half a cup of the starchy pasta water for later use, then set the pasta aside.
  2. Heat the olive oil in a large cast iron skillet over medium-high heat. Add the sliced raw andouille sausage rounds to the hot skillet in a single layer. Cook the sausage slices for about five to seven minutes, turning them occasionally, until they are beautifully browned, thoroughly cooked, and reach an internal temperature of 160°F (71°C).
  3. Reduce the heat to medium. Pour the heavy cream directly into the skillet with the browned sausage, scraping up any delicious browned bits from the bottom. Sprinkle the Cajun seasoning evenly over the cream. Stir the mixture constantly to distribute the spices and bring the cream to a gentle simmer.
  4. Gradually sprinkle the shredded Monterey Jack and grated Parmesan cheese into the simmering cream sauce. Stir continuously in a circular motion until the cheeses are completely melted and fully incorporated, creating a velvety, smooth, and thick sauce base.
  5. Add the cooked rotini pasta directly into the bubbling Cajun cheese sauce in the skillet. Toss the pasta gently using a metal spoon to ensure every spiral is thoroughly coated with the sauce. If the sauce is too thick, splash in a little reserved pasta water to loosen it.
  6. Remove the skillet from the heat source. Sprinkle the chopped fresh parsley evenly over the top of the hot pasta. Serve the dish immediately directly from the warm cast iron skillet while the cheese sauce is at its peak creaminess.
