Tips for success
For the best flavor, use a high-quality smoked sausage, such as andouille or kielbasa. The smokiness of the sausage is key to the dish's character.
If you can't find andouille, a good smoked sausage or even chorizo can work well. Adjust the Cajun seasoning to your heat preference, starting with less and adding more to taste.
To make this dish even quicker, use pre-cooked pasta or cook the pasta ahead of time and store it in the refrigerator. When reheating, add a splash of broth or cream to restore the sauce's creamy texture.
You can also add vegetables like bell peppers or spinach for extra color and nutrition, though they are not in the original video.
Variations
- Spicy Andouille: Use andouille sausage and add an extra teaspoon of Cajun seasoning or a pinch of cayenne for more heat. Garnish with sliced green onions instead of parsley.
- Add Vegetables: Sauté sliced bell peppers and mushrooms with the onion for extra color and texture. Add a handful of fresh spinach at the end and stir until wilted.
- Chicken Sausage: Swap the smoked pork sausage for chicken sausage for a lighter option. The cooking time remains the same; just ensure the sausage is heated through.
- Cheese Boost: Stir in 1/2 cup of shredded sharp cheddar or Monterey Jack along with the Parmesan for an even cheesier sauce. Reduce the salt slightly, as these cheeses add saltiness.

Serving ideas
Serve this creamy Cajun sausage pasta hot, straight from the skillet for a rustic, family-style presentation.
Garnish with extra chopped parsley and a sprinkle of Parmesan cheese if desired. A side of crusty bread or a simple green salad complements the rich, creamy pasta beautifully.
This dish is substantial enough to be a main course on its own. For a larger gathering, serve it alongside grilled chicken or shrimp. It also pairs well with a cold beer or a glass of white wine, like a Sauvignon Blanc, to balance the spice.

Creamy Cajun Sausage Pasta Skillet

Ingredients
- 12 oz rotini pasta
- 1 lb smoked sausage, sliced into rounds
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tsp Cajun seasoning
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Add the rotini and cook according to package directions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
- Heat the olive oil in a large cast-iron skillet over medium-high heat. Add the sliced sausage in a single layer and cook, stirring occasionally, until browned on both sides, about 5 minutes. Transfer to a plate and set aside.
- In the same skillet, reduce the heat to medium. Add the diced onion and cook until softened, about 3 minutes. Add the garlic and cook for 30 seconds until fragrant.
- Sprinkle the Cajun seasoning over the onions and garlic, stirring to coat. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let reduce slightly, about 2 minutes. Stir in the heavy cream and let the sauce thicken gently, about 3 minutes.
- Reduce the heat to low and whisk in the grated Parmesan cheese until fully melted and the sauce is smooth. Season with salt and pepper to taste.
- Return the browned sausage to the skillet and add the cooked rotini. Toss everything together until the pasta is evenly coated with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it. Simmer for 1-2 minutes to heat through.
- Remove the skillet from the heat. Sprinkle with chopped fresh parsley and serve immediately, directly from the skillet or on a platter.
