Before you start

Before beginning, ensure your oven is preheated to 400°F (200°C) to ensure the gratin starts cooking immediately upon entering. Wash the Brussels sprouts thoroughly under cold running water and trim off any tough, woody ends.

Peel away any yellow or wilted outer leaves to reveal the bright green centers. Mince the garlic finely so it integrates smoothly into the cream, and crumble the bacon into small, bite-sized pieces.

Have your baking dish ready on a stable surface to avoid spills when pouring the liquid ingredients.

Ingredients at a glance (5)
  • 2 lb Brussels sprouts, halved
  • 1 1/2 cups heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup shredded parmesan cheese
  • 4 slices cooked bacon, crumbled

Instructions

Preparing the sprouts

  1. Prepare the sprouts
Preheat the oven to 400°F (200°C). Arrange the halved Brussels sprouts cut side up in a large rectangular ceramic baking dish in a single layer to ensure even cooking.
Look for sprouts arranged cut side up
Tip Ensure the sprouts are uniformly sized for even baking results.

The sprouts should be arranged in a tight, uniform layer with the cut sides facing up. This arrangement is crucial as it creates a larger surface area for heat to reach the center of the sprouts, ensuring they cook through while developing a light, golden color on the edges.

Adding the cream

  1. Create the cream sauce
Combine the heavy cream and minced garlic in a clear glass measuring cup. Pour this mixture evenly over the arranged Brussels sprouts, making sure it pools around each sprout.
Look for cream pooling around the sprouts
Tip Use a whisk to ensure the garlic is evenly distributed throughout the cream.

The garlic cream should be poured slowly to ensure it coats every sprout. The liquid should pool at the base of the dish, filling the gaps between the sprouts. This liquid base will reduce and thicken into a luscious sauce during the baking process, transforming the dish.

Baking until golden

  1. Bake and finish
Scatter the shredded parmesan cheese and crumbled cooked bacon over the top of the dish. Place in the oven and bake until the cheese is golden and the garlic cream is bubbling at the edges.
Look for cheese golden and cream bubbling
Tip Let the gratin rest for five minutes before serving to allow the sauce to thicken slightly.

The dish is ready when the kitchen is filled with the aroma of roasted garlic and browned cheese. The top should be uniformly golden, and the cream sauce should be bubbling vigorously. Check that the sprouts are tender by inserting a knife into the thickest part of a sprout.

Common mistakes

Avoid overcrowding the baking dish, as this prevents the sprouts from cooking evenly and can lead to a watery, thin sauce. Do not skip the resting period after removing the dish from the oven, as the cream sauce needs a few minutes to settle and thicken properly before being served.

Another common mistake is using too much salt, as the bacon and parmesan are naturally salty; always taste your ingredients before adding extra seasoning to ensure the final dish remains balanced and flavorful.

How to tell it’s done

The gratin is done when the Brussels sprouts are fork-tender and can be easily pierced without resistance. The sauce should be visibly bubbling around the edges of the dish and slightly thickened.

The parmesan topping must be golden brown and crisp, indicating that the fats have rendered and the cheese has formed a delicious crust. If you notice the cheese browning too quickly before the sprouts are soft, you can loosely tent the dish with aluminum foil for the final few minutes of baking.
