Tips for success
For the best texture, cook the pasta just shy of al dente—it will finish cooking in the sauce.
Reserve at least a cup of pasta water, even if you think you don't need it; you can always add more to loosen the sauce. The starch in the water is what makes the sauce cling to the pasta, so don't skip it.
To get a deep sear on the mushrooms, make sure your skillet is hot before adding them. Don't move them too soon—let them sit in the pan without stirring for a few minutes to develop a golden crust. If your skillet isn't large enough, cook the mushrooms in batches to avoid steaming.
Variations
- Add Chicken: For extra protein, add sliced cooked chicken breast along with the pasta. Sear the chicken in the skillet first, then remove it and proceed with the mushrooms, then stir it back in at the end.
- Vegetable Boost: Add a handful of baby spinach or peas in the last minute of cooking. The residual heat will wilt the spinach or warm the peas, adding color and nutrients to the dish.
- Spicy Kick: Add a pinch of red pepper flakes along with the garlic for a subtle heat that balances the creamy sauce. Adjust the amount to taste.
- Herb Swap: Replace the parsley with fresh basil or chives for a different fresh flavor. Tear the basil leaves just before serving to release their aroma.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or milk to restore the creamy sauce.
- Freezer
- Freezing is not recommended—the creamy sauce may separate upon thawing, and the pasta texture will suffer.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of water or milk, stirring until heated through.
Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days.
The sauce will thicken as it cools; when reheating, add a splash of water or milk to bring back the creamy consistency. Reheat gently on the stovetop or in the microwave, stirring frequently to avoid hot spots.
This dish is best made fresh, but you can prepare components ahead: slice the mushrooms and mince the garlic up to a day in advance, storing them in the refrigerator.
You can also cook the pasta ahead and toss it with a little olive oil to prevent sticking, then reheat it in the sauce when ready to serve.
Serving ideas
Serve this creamy pasta immediately, straight from the skillet, for the most luxurious texture. Twirl a forkful of rigatoni with a sautéed mushroom on top for the perfect bite. A sprinkle of extra parmesan and cracked black pepper at the table adds a finishing touch that feels special.
This dish pairs beautifully with a crisp green salad dressed in a simple vinaigrette to cut through the richness.
A glass of dry white wine, like Sauvignon Blanc or Pinot Grigio, complements the garlic and herbs. For a heartier meal, serve alongside crusty bread to soak up every last drop of the sauce.

Creamy Boursin Mushroom Pasta Skillet in 15 Minutes

Ingredients
- 300 g rigatoni or penne pasta
- 300 g cremini mushrooms, sliced
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 wheel (150 g) Boursin Garlic & Fine Herbs cheese
- 150 ml hot pasta cooking water
- 50 g grated parmesan
- 2 tbsp fresh parsley, chopped
- salt to taste
- black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve 150 ml of the pasta cooking water before draining. Drain the pasta and set aside.
- In a large skillet, heat the olive oil and butter over high heat. Add the sliced cremini mushrooms in a single layer and cook without stirring for 2-3 minutes until deeply browned on one side. Then stir and continue cooking for another 2-3 minutes until golden brown and caramelized.
- Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Place the entire wheel of Boursin cheese in the center of the skillet and let it soften for a minute.
- Pour the hot pasta cooking water into the skillet. Whisk the melted Boursin into the water, stirring continuously until the mixture becomes a smooth, silky sauce. Season with salt and black pepper to taste.
- Add the drained rigatoni to the skillet along with the grated parmesan. Toss everything together with tongs or a spatula until the pasta is evenly coated with the creamy sauce and the parmesan is melted.
- Remove the skillet from the heat. Sprinkle the fresh chopped parsley over the pasta and give it one final toss. Serve immediately, twirling a forkful of pasta with a sautéed mushroom for the perfect bite.
