Tips for success
For a deeper flavor, you can lightly sear the chicken breasts in a hot skillet for one minute per side before placing them in the slow cooker, though this is optional. Adding a pinch of red pepper flakes can introduce a subtle heat that cuts through the richness of the cream cheese, providing a nice balance to the overall flavor profile of the dish.
If you prefer a more vibrant presentation, consider garnishing the finished dish with freshly chopped herbs such as parsley or chives. These fresh elements add a pop of color and a light, herbaceous note that complements the creamy sauce beautifully.
Serve this dish alongside steamed vegetables or a crisp green salad to round out the meal with some fresh textures and light, clean flavors.
Variations
- Spicy BLT Chicken: Add 1 tablespoon of diced jalapeños or a teaspoon of hot sauce during the seasoning phase to bring a spicy kick to the dish.
- Herbed BLT Chicken: Incorporate 1 tablespoon of dried basil or oregano along with the garlic powder to add an aromatic, herbaceous depth to the creamy sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze the chicken and sauce in a freezer-safe container for up to 1 month. Thaw in the refrigerator overnight before reheating.
- Reheat
- Reheat gently in a saucepan over low heat, stirring occasionally, or in the microwave on medium power until heated through.
Allow any leftovers to cool to room temperature, but do not leave them out for longer than 2 hours. Once cooled, transfer the chicken and sauce into airtight containers.
Proper storage in the refrigerator will maintain the quality of the dish for up to 3 days. When reheating, it is best to do so gently to prevent the cream-based sauce from breaking or separating during the process.
This dish is excellent for make-ahead preparations. You can assemble the ingredients in the slow cooker insert the night before, cover it, and keep it in the refrigerator.
When you are ready to cook, simply take the insert out, place it into the slow cooker base, and start the cooking process. This is a perfect strategy for busy mornings when you want dinner to be ready by the time you return home.
Serving ideas
This creamy BLT chicken is best served warm, directly from the slow cooker. It pairs exceptionally well with crusty bread or garlic toast, which can be used to mop up the delicious, creamy sauce. Consider serving the chicken over a bed of fluffy rice, mashed potatoes, or even your favorite pasta, which will absorb the flavorful sauce and provide a satisfying base for the meal.
For a lighter serving option, place the chicken breasts on a bed of fresh baby spinach or mixed greens. The warmth of the chicken will slightly wilt the greens, creating a wilted salad that is both sophisticated and easy to prepare.
A side of roasted asparagus or steamed green beans also provides a nice crunch that contrasts well with the tender chicken and smooth, creamy sauce.

Creamy BLT Slow Cooker Chicken for Easy Weeknight Dinners

Ingredients
- 4 count boneless skinless chicken breasts
- 1 cup cherry tomatoes
- 6 slices bacon, cooked and crumbled
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 8 oz cream cheese
- 1/2 cup chicken broth
Instructions
- Place the raw chicken breasts flat into the bottom of the slow cooker insert. Scatter the cherry tomatoes and crumbled bacon evenly over the top of the chicken pieces. Ensure the chicken is arranged in a single layer to allow for even cooking throughout the process.
- Sprinkle the garlic powder and black pepper over the chicken, tomatoes, and bacon. Place the block of cream cheese in the center, and pour the chicken broth around the sides of the cream cheese block to help it melt and incorporate into a sauce during the cooking cycle.
- Cover the slow cooker and cook on low for 4 hours until the chicken is fully cooked through. Check that the internal temperature of the thickest part of the chicken reaches 165°F (74°C). Remove the chicken, stir the sauce ingredients together until smooth and creamy, then serve the chicken topped with the sauce.
