Tips for success
To add an extra layer of flavor, consider drizzling a tiny bit of high-quality balsamic glaze over the top just before serving. The slight acidity and sweetness of the balsamic vinegar pair exceptionally well with the salty feta and the sweet roasted tomatoes.
If you prefer a bit more heat, you can increase the amount of chili flakes in the baking dish before roasting, or sprinkle some fresh red pepper flakes over the finished dish for a vibrant, spicy finish that wakes up the palate.
For a more rustic presentation, serve the pasta directly in the baking dish if it is attractive enough. This not only keeps the pasta warmer for longer but also makes for a beautiful, communal dining experience. If you are serving a larger crowd, you can easily double the recipe by using a larger baking dish, just ensure that you do not stack the tomatoes too high so they still get plenty of exposure to the oven heat and roast evenly.
Variations
- Spinach and Feta Pasta: Stir in two cups of fresh baby spinach during the final tossing step. The residual heat from the pasta and sauce will wilt the spinach perfectly, adding a vibrant pop of color to the dish.
- Roasted Vegetable Medley: Add chopped bell peppers, zucchini, or red onion to the baking dish along with the cherry tomatoes. These vegetables will roast beautifully alongside the feta, adding more texture and depth to the overall flavor profile of the sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the creamy sauce may separate and the pasta texture will degrade upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of water or broth to loosen the sauce until creamy.
If you have leftovers, allow them to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Storing the pasta in a sealed container will help prevent it from drying out in the refrigerator.
When you are ready to enjoy the leftovers, you may find that the sauce has thickened slightly as the pasta continues to absorb moisture; this is normal and can be easily rectified during the reheating process with a splash of water.
While this dish is best enjoyed fresh, you can prepare the roasting components ahead of time. You can assemble the baking dish with the feta, tomatoes, oil, and seasonings and keep it in the refrigerator for up to 24 hours. When you are ready to eat, simply take it out of the fridge and bake it as instructed. It is best to cook the pasta fresh right before serving to maintain the best texture, as pasta can become mushy if cooked too far in advance.
Serving ideas
Serve this pasta in warm bowls to ensure the sauce stays creamy for as long as possible. A simple side salad with a light vinaigrette provides a nice acidic contrast to the rich, cheesy pasta.
Crusty bread is also an excellent accompaniment to help scoop up any remaining sauce left in the bowl. Because the dish is already quite filling, keep the sides simple and fresh to balance the meal, allowing the flavors of the feta and tomatoes to remain the star of the show.
For a complete dining experience, consider pairing this dish with a crisp white wine, such as a Sauvignon Blanc or a Pinot Grigio. The acidity in these wines cuts through the richness of the feta cheese and complements the sweetness of the roasted cherry tomatoes perfectly.
If you are serving children, a glass of sparkling water with a squeeze of fresh lemon makes for a refreshing and sophisticated beverage that does not overpower the delicate flavors of the pasta and sauce.

Creamy Baked Tomato and Feta Shell Pasta

Ingredients
- 8 oz Greek feta cheese, one block
- 2 cups cherry tomatoes
- 3 cloves garlic, sliced
- 3 tbsp olive oil
- 1/2 tsp chili flakes
- 1/2 tsp salt
- 1 tsp oregano
- 12 oz conchiglie shell pasta
- 1/4 cup fresh basil leaves
- 1/4 cup parmesan cheese, grated
- black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Place the block of feta cheese in the center of a baking dish. Surround it with the cherry tomatoes, sliced garlic, olive oil, chili flakes, salt, and oregano. Bake for 30 minutes until the tomatoes are blistered and the feta is soft.
- While the vegetables roast, bring a large pot of salted water to a boil and cook the shell pasta according to the package directions until al dente. Once the feta and tomatoes are out of the oven, use a fork to mash them together directly in the baking dish until a smooth, velvety pink sauce forms.
- Drain the cooked pasta and add it directly into the baking dish with the sauce. Toss in the fresh basil leaves and mix thoroughly until every shell is well-coated. Serve immediately, topped with grated parmesan cheese and freshly cracked black pepper.
