Before you start
Before you begin, ensure your oven is preheated to 375°F (190°C). If you are preparing the mashed potatoes from scratch, make sure they are fully cooked and mashed until smooth before you start the assembly process.
Soften the cream cheese by leaving it on the counter for about 30 minutes, as this will make it much easier to whisk into a smooth consistency with the sour cream and melted butter. Have your baking dish ready on a stable surface.
Ingredients at a glance (5)
- 3 lbs prepared mashed potatoes
- 4 tbsp butter, melted
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese
Instructions
Base Preparation
- Prepare the BaseSpread the prepared mashed potatoes into the bottom of a large, rectangular ceramic baking dish. Ensure the potatoes are distributed evenly to create a flat, consistent base for the creamy topping.Look for The potatoes should fill the dish in thick, rough swirls.Tip Use the back of a spoon to create small wells in the surface of the potatoes so the cream mixture can settle deep into the dish.
The mashed potatoes should be spread in an even, smooth layer throughout the baking dish. Check that there are no large pockets of air and that the surface has been slightly swirled to create small indentations, which will help hold the creamy mixture in place once it is poured over the top.
Topping Application
- Mix and Pour ToppingIn a separate mixing bowl, whisk together the melted butter, cream cheese, and sour cream until the mixture is smooth and thoroughly combined. Pour this mixture evenly over the top of the mashed potatoes, allowing it to pool into the swirls you created.Look for The mixture should be a smooth, pourable consistency before application.Tip Ensure the cream cheese is at room temperature so it incorporates easily with the butter and sour cream without leaving lumps.
The cream mixture should be completely smooth, with no visible lumps of cream cheese. Once poured over the potatoes, it should evenly coat the surface. Ensure the mixture settles into the swirls. Verify that the cheese is distributed in a uniform layer, covering the entire surface right to the edges of the baking dish.
Baking and Finishing
- Bake and ServeSprinkle the shredded cheddar cheese over the entire surface of the potatoes. Place the dish into a preheated oven at 375°F (190°C) and bake until the cheese is melted, bubbling, and the edges are golden brown, approximately 20 minutes. Remove from the oven and let rest for 5 minutes before serving.Look for The cheese should be completely melted and bubbling with golden edges.Tip Keep a close eye on the oven during the last few minutes to ensure the cheese does not burn.
The final dish should look golden and inviting. The cheese should be bubbling, and the edges should show a slight darkening. The potatoes should be heated through entirely.
Before serving, ensure the dish has rested for five minutes so the structure can firm up slightly, allowing for a clean, professional-looking scoop.
Common mistakes
Avoid over-mixing the cream mixture, as this can incorporate too much air and affect the final texture. Ensure the potatoes are spread in an even layer to prevent uneven heating.
Do not skip the resting time after removing the dish from the oven, as this allows the sauce to settle and makes it much easier to serve clean scoops without the dish falling apart on the plate. Finally, avoid using pre-shredded cheese if possible, as it often contains anti-caking agents that prevent a smooth melt.
How to tell it’s done
The dish is done when the cheddar cheese on top is fully melted, bubbling across the surface, and has developed a light golden brown color. The edges of the potatoes should be hot and slightly bubbling as well.
Because the dish is assembled with pre-cooked ingredients, the primary goal is to heat everything through and melt the topping. The internal temperature of the center should reach at least 165°F (74°C) for food safety.
