Before you start

Before beginning the cooking process, ensure that all ingredients are measured and ready. Bring the cream cheese to room temperature so it blends easily with the chives.

Preheat the oven to 375°F (190°C) to ensure it is at the correct temperature when the chicken is ready to be baked. Clear a clean workspace for handling the raw chicken, and have a baking dish prepared to minimize movement once the meat is seasoned and wrapped.

Ingredients at a glance (5)
  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese, softened
  • 2 tbsp fresh chives, chopped
  • 8 slices bacon
  • 2 cups tortilla chips, crushed

Instructions

Filling and stuffing the breasts

  1. Prepare the filling and chicken
Combine the softened cream cheese and chopped chives in a small bowl until smooth. Slice a pocket into the side of each chicken breast, being careful not to cut all the way through. Stuff each pocket generously with the chive cream cheese mixture and secure with toothpicks if necessary.
Look for Ensure the cream cheese is evenly distributed inside the chicken pockets to prevent leaking during the baking process.
Tip Soften the cream cheese at room temperature for thirty minutes to make the blending with chives much easier.

The cream cheese and chive mixture should be thoroughly combined and smooth. Each chicken breast should have a well-formed pocket that is securely stuffed, ensuring the cheese is contained within the meat. Check that the chicken is dry on the exterior so the bacon slices will stay in place during the wrapping phase.

Wrapping and coating

  1. Wrap and coat the chicken
Wrap two slices of bacon around each stuffed chicken breast, overlapping slightly to ensure full coverage. Roll each bacon-wrapped breast in the crushed tortilla chips, pressing down firmly so the crumbs adhere to the bacon surface. Place the prepared chicken breasts into a baking dish.
Look for The bacon should be tight against the chicken to keep the filling secure while the crust forms on the outside.
Tip If the chips are not sticking well, lightly brush the bacon with a little oil or egg wash first.

The bacon should be wrapped snugly around the chicken, with the overlapping edges placed face-down in the baking dish to prevent unravelling.

The tortilla chip coating should be applied evenly across the entire surface of the bacon, leaving no large gaps of bare meat. The chicken breasts should be arranged in the baking dish with enough space for heat to circulate.

Baking to perfection

  1. Bake until golden
Bake the chicken in a preheated oven at 375°F (190°C) for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Remove from the oven and let the chicken rest for at least 5 minutes before serving to allow the juices to redistribute throughout the meat.
Look for The crust should be deep golden brown and the bacon rendered and crispy to the touch.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer inserted into the thickest part of the breast to ensure the chicken is perfectly cooked and safe to eat.

At the end of the baking time, the crust will appear deep golden brown and the bacon will be fully cooked and rendered. The chicken should feel firm to the touch. A thermometer will confirm that the center of the breast has reached 165°F (74°C), and the filling will be hot and fragrant.

Common mistakes

A common mistake is overstuffing the chicken, which can cause the filling to leak into the baking dish; keep the filling to a reasonable amount to ensure the pocket stays sealed.

Another error is using bacon that is sliced too thick, which may not crisp up properly in the time it takes to cook the chicken. Finally, ensure the chicken is not crowded in the baking dish, as this creates steam rather than the desired crispy exterior.

How to tell it’s done

The chicken is perfectly done when the internal temperature, measured with a digital thermometer at the thickest part, reaches 165°F (74°C). The bacon should be golden brown and crisp, and the cream cheese filling will be hot and slightly bubbling.

Ensure the chicken has rested for at least 5 minutes before cutting to maintain its juiciness and prevent the filling from running out too quickly upon slicing.
