Before you start

Before beginning, ensure all refrigerated ingredients, including the cinnamon roll dough and eggs, are ready to use. Preheat the oven to 350°F (175°C) so it is fully heated by the time the dish is assembled.

Have a 9x13 inch baking dish cleaned and lightly greased with butter or non-stick cooking spray. Gather a medium mixing bowl, a whisk, and a serrated knife to ensure the dough is cut cleanly without being compressed, which helps maintain the structural integrity of the rolls.

Ingredients at a glance (5)
  • 2 cans refrigerated cinnamon rolls, quartered
  • 3 large eggs
  • 1/4 cup fresh orange juice
  • 1 tsp vanilla extract
  • 1 cup fresh cranberries

Instructions

Dough Preparation

  1. Prepare the Dough
Preheat the oven to 350°F (175°C). Using a serrated knife, carefully cut each cinnamon roll into four equal pieces. Arrange the quartered pieces evenly across the bottom of a 9x13 inch ceramic baking dish, ensuring they are distributed to fill the space.
Look for Dough pieces should be evenly spaced and fill the dish bottom.
Tip Lightly grease the baking dish with butter or non-stick spray to prevent sticking.

The cinnamon rolls should be cut into uniform quarters and arranged in the baking dish with enough space between them to allow for expansion.

The dish should look orderly, with the cinnamon swirls facing upward in most pieces, ensuring a consistent appearance and texture throughout the entire bake once it comes out of the oven.

Custard Incorporation

  1. Mix and Pour Custard
In a medium mixing bowl, whisk together the eggs, orange juice, and vanilla extract until the mixture is uniform and pale orange. Pour the custard evenly over the arranged cinnamon roll pieces in the baking dish, allowing it to seep into the crevices.
Look for Custard should be fully incorporated and pooled around the dough pieces.
Tip Make sure to whisk the eggs thoroughly so no streaks of white remain.

The custard should be a pale, smooth orange color with no visible egg streaks or clumps. When poured, it should coat the bottom of the dish and surround the dough pieces entirely. Check that the liquid level is consistent across the dish, ensuring all pieces of dough are equally moistened before the cranberries are added.

Baking and Finishing

  1. Top and Bake
Scatter the fresh cranberries over the top of the cinnamon roll and custard mixture. Place the dish in the preheated oven and bake until the rolls are puffed and golden brown, and the custard is set, reaching an internal temperature of 160°F (71°C) for the eggs. Remove from the oven and let rest for 5 minutes before serving.
Look for Top should be golden brown and the custard set in the center.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Check the center of the dish with a knife to ensure the custard is set.

The dish is ready when the tops of the rolls are a rich, toasted golden brown and the cranberries have burst, releasing their juices into the custard. The entire assembly should appear puffed and firm to the touch, indicating that the egg custard has fully set throughout the base of the dish.

Common mistakes

Avoid over-crowding the dish, as this can prevent the center from baking through properly and lead to a doughy texture. Do not skip the resting period after removing the dish from the oven; cutting into it too soon will cause the hot custard to run and make serving messy.

Additionally, ensure the oven is fully preheated before placing the dish inside, as a cold oven will cause the dough to lose its shape and result in a dense, flat final product.

How to tell it’s done

The bake is finished when the cinnamon rolls have puffed significantly and reached a deep golden brown color. The custard should be completely set in the center, showing no signs of liquid movement when the dish is gently shaken.

Using a kitchen thermometer, ensure the custard reaches an internal temperature of 160°F (71°C) to confirm the eggs are safely cooked through. Allow the dish to rest for 5 minutes before portioning into squares, as this helps the custard firm up further.
