Before you start

Before starting, cut the ribeye into 1-inch cubes if not pre-cut. Dice the white onion. If using a block of cowboy butter, slice it into rounds so it melts evenly. Measure the au jus mix.

No need to brown the meat or preheat anything. The slow cooker insert should be clean and ready. This recipe comes together in about 10 minutes of active time. Have the lid ready and a serving spoon nearby for when it's done.

Ingredients at a glance (5)
  • 2 lb ribeye steak, cut into 1-inch cubes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup diced white onion
  • 2 sticks (8 oz total) garlic-herb cowboy butter, sliced
  • 1 oz au jus gravy mix

Instructions

Layer and Go

  1. Layer the Ingredients
Place the cubed ribeye bites in the bottom of a 6-quart slow cooker in an even layer. Spread the condensed cream of mushroom soup over the beef, then scatter the diced white onion on top. Place the slices of garlic-herb cowboy butter over the onion, and sprinkle the au jus gravy mix evenly over everything.
Look for The beef is covered with soup, onions, butter, and seasoning mix.
Tip No need to stir — the layers will meld as it cooks.

At this point, the raw beef sits in the slow cooker with the soup, onions, butter, and au jus mix layered on top. The aromas of garlic and herbs are already noticeable. The butter is cold and firm, but will melt during cooking. The ingredients are neatly layered — no stirring needed. This is the quick setup that makes the recipe so effortless.

Slow Simmer

  1. Slow Cook
Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender. The sauce will be bubbling and the butter fully melted. Stir gently before serving to combine the gravy. Let it rest for 3 minutes before slicing.
Look for The beef is tender and the sauce is thick and bubbling.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check at the low end of the range; cooking times vary by slow cooker.

After a few hours, the slow cooker is bubbling gently. The butter has melted into the soup and au jus, creating a fragrant, golden gravy. The beef is visibly tender, and the onions are soft and translucent.

The kitchen smells of rich beef and garlic. The sauce is thick and coats the back of a spoon. The meat should be fork-tender and the gravy glossy.

Rest and Serve

  1. Rest and Serve
Turn off the slow cooker and let the beef rest in the warm sauce for at least 3 minutes. Serve the ribeye bites and mushrooms over mashed potatoes or with crusty bread, spooning extra gravy over the top.
Look for The meat has rested and the gravy is ready to spoon over.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resting helps the juices redistribute in the meat.

The slow cooker is off, and the beef rests in the warm gravy. The sauce has thickened slightly as it sits. When you lift a piece, it glistens with butter and au jus. The mushrooms and onions are soft and flavorful. The dish is ready to be spooned over mashed potatoes or polenta. The aroma is deeply savory and inviting.

Common mistakes

Avoid opening the slow cooker lid repeatedly, as this lets heat escape and extends cooking time. Don't stir the ingredients at the start — the layers are meant to meld as they cook.

If the sauce seems thin at the end, leave the lid off for 15-20 minutes on HIGH to reduce. Avoid overcooking on HIGH, which can make the beef dry; check for doneness at the lower time range. Use a meat thermometer to ensure the beef reaches 145°F (63°C) and then rest it.

How to tell it’s done

The beef is done when it is fork-tender and easily pulls apart. The internal temperature should reach at least 145°F (63°C) for medium-rare, but slow-cooked beef will be well above that and still moist.

Let the meat rest in the warm sauce for at least 3 minutes before serving to allow the juices to redistribute. The sauce should be thick and glossy, and the onions and mushrooms should be soft and translucent.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
