Before you start

Before beginning, ensure that all ingredients are measured and ready. If using a pre-baked brownie, have it cut to fit the container. Make sure the heavy cream is cold, as it whips much better at a lower temperature. Have the glass dish ready on a stable surface.

Prepare the saucepan and spatula for the ganache stage. Clear enough space in the refrigerator for the dish to sit level while it sets, as moving it after the ganache is poured can cause the layers to shift or smudge. Having everything organized allows the assembly to proceed smoothly.

Ingredients at a glance (5)
  • 1 pan brownie, pre-baked or store-bought
  • 2 cups heavy cream, whipped to stiff peaks
  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream, for ganache
  • 1/2 cup dark chocolate chunks

Instructions

Base Layer Assembly

  1. Prepare the base
Place the brownie layer into the bottom of the glass dish. Ensure it covers the bottom evenly, trimming the edges if necessary to fit the container perfectly.
Look for The brownie layer should be flat and snug against the dish walls.
Tip If the brownie is too thick, slice it horizontally to create a thinner, more refined base.

The brownie should be pressed firmly into the glass dish, covering the base completely without large gaps. The edges should be clean, and the brownie should be level. This provides the structural integrity for the remaining layers.

If the brownie is uneven, trim it with a knife to ensure a flat surface, as this makes spreading the subsequent layers significantly easier and ensures a beautiful cross-section when the dessert is eventually served.

Cream Layer Preparation

  1. Whip the cream
In a chilled mixing bowl, beat the heavy cream using an electric mixer until firm, stiff peaks form. Spread the whipped cream evenly over the brownie layer, smoothing the top with a spatula.
Look for The cream should hold its shape when the beater is lifted.
Tip Chill the mixing bowl in the freezer for ten minutes before whipping for the best volume.

The whipped cream should be smooth, thick, and hold stiff peaks. When you spread it over the brownie, it should form a solid, even layer that reaches the edges of the dish. There should be no visible air bubbles or streaks of liquid cream. Check that the layer is uniform in thickness across the entire dish, creating a clean, professional look that contrasts beautifully with the dark brownie layer beneath it.

Ganache Finishing

  1. Prepare and apply ganache
Heat the remaining heavy cream in a saucepan until just simmering. Pour the hot cream over the dark chocolate chips and stir until smooth and glossy. Drizzle the ganache over the whipped cream layer, then sprinkle with chopped dark chocolate chunks. To ensure the egg-based brownie is safe, bake it until it reaches 160°F (71°C). Refrigerate for at least two hours before serving.
Look for The ganache should be completely smooth and glossy without any solid chocolate bits.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Allow the ganache to cool slightly for five minutes before pouring to prevent the whipped cream from melting.

The ganache should be poured slowly and evenly, creating a mirror-like finish over the top of the cream. The chopped chocolate pieces should be distributed evenly to add texture.

Once finished, the dessert should look cohesive, with distinct, crisp lines between the layers. Ensure the final assembly is clean and free of spills on the sides of the dish before placing it into the refrigerator to set for the required time.

Common mistakes

A common mistake is pouring the ganache while it is too hot, which will cause the whipped cream to melt and the layers to bleed into one another. Always allow the ganache to cool for several minutes until it reaches a thick, pourable consistency.

Another error is over-whipping the cream, which creates a buttery texture instead of a light, airy one. Finally, failing to chill the dessert for the full two hours will result in a messy presentation when slicing, as the layers will not have had enough time to firm up.

How to tell it’s done

The dessert is done when the ganache has set firmly and the whipped cream layer is stable. When you tilt the dish slightly, the ganache should stay in place and not run. The brownie base should be chilled and firm to the touch, providing a solid foundation for the other layers. The brownie must be baked to an internal temperature of 160°F (71°C) to ensure the eggs are fully cooked through.

  • Egg dishes: 160°F (71°C) in the thickest part
