Tips for success
For the best texture, use a 6-quart slow cooker so the ingredients fit comfortably without overcrowding. If your slow cooker runs hot, check the casserole at 3 1/2 hours to prevent overcooking.
You can also cook on high for 2-3 hours if you're short on time, but low is preferred for the most tender potatoes.
To make this dish ahead, assemble all the ingredients in the slow cooker insert and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time since you're starting from cold. Leftovers can be stored in the refrigerator for up to 4 days.
Variations
- Bacon & Cheddar: Substitute the ham with 8 slices of cooked, crumbled bacon and use sharp cheddar instead of Colby-Jack. Add a teaspoon of smoked paprika for a deeper smoky flavor.
- Vegetarian: Omit the ham and add 1 cup of sautéed mushrooms and 1 cup of chopped broccoli. Use vegetable broth in the garlic cream sauce for extra flavor.
- Spicy Southwestern: Add 1 diced jalapeño and 1/2 cup of diced green chiles. Use pepper jack cheese instead of Colby-Jack and stir in a teaspoon of cumin.
- Loaded Baked Potato: Top the finished casserole with crumbled cooked bacon, chopped green onions, and a dollop of sour cream. Serve with extra cheese on top.

Assemble the entire casserole in the slow cooker insert the night before, cover, and refrigerate.
The next day, place the insert in the slow cooker and cook on low for 4 1/2 to 5 hours, since the ingredients start cold. This makes it perfect for busy mornings.
Serving ideas
Serve this hashbrown bake as the star of a brunch buffet or as a comforting dinner with a crisp green salad and crusty bread. It also pairs well with roasted vegetables or a simple tomato salad.
The creamy, cheesy texture is satisfying on its own, but a dollop of sour cream or a sprinkle of fresh chives can elevate it further.
For a heartier meal, top each serving with a fried egg or serve alongside grilled sausages. This casserole is also great for potlucks—it travels well and stays warm in the slow cooker. Just be sure to have a large spoon ready for serving.

Colby-Jack Roasted Garlic Hashbrown Bake: Easy Crockpot Dinner

Ingredients
- 2 lb shredded russet potato hashbrowns
- 1 lb thick-cubed honey-glazed smoked ham
- 1 cup caramelized onions
- 1 cup roasted garlic cream sauce
- 8 oz cream cheese, softened
- 2 cups shredded Colby-Jack cheese
Instructions
- Place the shredded hashbrowns in the bottom of a 6-quart slow cooker. Spread them into an even layer. Scatter the cubed ham over the hashbrowns, distributing it evenly.
- Scatter the caramelized onions over the ham and hashbrowns. Pour the roasted garlic cream sauce evenly over the top, covering as much surface as possible.
- Place the softened cream cheese in the center of the slow cooker. Sprinkle the shredded Colby-Jack cheese evenly over the top, covering the cream cheese and the rest of the mixture.
- Cover the slow cooker and cook on low for 4 hours, or until the hashbrowns are tender and the cheese is melted and bubbly. Do not stir during cooking to allow the top to form a golden crust.
- After 4 hours, check that the hashbrowns are tender by piercing them with a fork. The cheese should be fully melted and the casserole should be hot throughout. If not, continue cooking for another 30 minutes.
- Scoop the hot casserole onto plates or a serving platter. Use a large spoon to get a generous portion with plenty of melted cheese and ham in each serving.
