Tips for success
For the most tender beef, cook on low rather than high. Low heat gives the collagen time to break down slowly, resulting in fork-tender meat.
If you're short on time, you can cook on high for 4-5 hours, but the texture won't be as silky. Always let the beef rest for at least 3 minutes before serving to allow the juices to redistribute.
Toasting the cumin seeds in a dry pan before adding them to the slow cooker intensifies their flavor. You can also add a pinch of chili flakes or a chopped green chili for heat, but the recipe as written is mild and family-friendly.
If you want a thicker sauce, stir in a tablespoon of cornstarch mixed with water during the last 30 minutes of cooking.
Variations
- Chicken Saag: Swap the beef brisket for boneless, skinless chicken thighs. Cook on low for 4-5 hours, or until the chicken is tender and reaches 165°F (74°C). Shred the chicken before serving.
- Spicy Saag: Add 1-2 chopped green chilies or 1/2 teaspoon of red pepper flakes along with the aromatics for a spicy kick. Adjust the heat to your preference.
- Creamy Cashew Saag: Replace half of the coconut cream with 1/2 cup of raw cashews soaked in water for 2 hours and blended until smooth. This adds a rich, nutty flavor and extra creaminess.
- Vegetarian Saag: Omit the beef and add 1 can of drained chickpeas and 1 cup of frozen peas in the last 30 minutes of cooking. Cook on low for 4 hours, then stir in the chickpeas and peas.

Store leftover saag beef brisket in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight, making it even more delicious.
Reheat gently on the stovetop or in the microwave, adding a splash of water or coconut milk if the sauce has thickened too much.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes of cooking time if starting from cold.
Serving ideas
Serve this coconut cream spinach saag beef brisket over steamed basmati rice or with warm garlic naan. The rice soaks up the creamy sauce, while the naan is perfect for scooping up every last bit. A side of cooling cucumber raita or a simple green salad would round out the meal.
For a low-carb option, serve the saag over cauliflower rice or with a side of roasted vegetables. The curry is hearty enough to stand alone, but the rice and naan make it a complete, satisfying dinner. Garnish with extra cilantro and a squeeze of lime for brightness.

Coconut Cream Spinach Saag Beef Brisket

Ingredients
- 2 lb beef brisket, cut into 1-inch cubes
- 6 cups baby spinach leaves
- 2 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 2 tsp toasted cumin seeds
- 1 can (13.5 oz) coconut cream
- 1/2 cup fresh cilantro leaves, chopped
- 1 tsp kosher salt
Instructions
- Place the cubed beef brisket in the bottom of a 6-quart slow cooker. Add the baby spinach, grated ginger, minced garlic, and toasted cumin seeds directly on top of the beef. Sprinkle with kosher salt.
- Pour the coconut cream over the top of the ingredients. Scatter the chopped cilantro over the surface. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the beef is fork-tender and easily shreds. The spinach will wilt and meld into the sauce. Let it rest for 3 minutes before slicing.
- Use an instant-read thermometer to check the thickest cube of beef. It should register at least 145°F (63°C). For extra tenderness, cook until 190°F (88°C) for fall-apart texture. Let the beef rest for at least 3 minutes before serving.
- Spoon the saag beef brisket over steamed basmati rice. Ladle extra sauce over the top. Serve with warm garlic naan on the side.
