Tips for success
For the best rise, use fresh yeast and warm milk. The dough should be soft but not sticky; adjust with flour or milk as needed.
Knead until the dough passes the windowpane test, where a small piece stretches thin without tearing. This ensures a light, airy crumb.
When molding the dough over the clay bowl, work gently to avoid thinning the dough too much.
If the dough resists, let it rest for a few minutes before continuing. The egg wash gives a glossy, golden crust; brush it evenly for a professional finish.
Variations
- Spicy Beef: Add 1 teaspoon of red pepper flakes or a chopped fresh chili to the beef while cooking. Use a pepper jack cheese instead of mozzarella for extra heat.
- Lamb and Feta: Swap ground beef for ground lamb and add 1/2 cup crumbled feta to the cheese mixture. Season with dried oregano and a pinch of cinnamon.
- Vegetarian: Replace the beef with 1 1/2 cups of cooked lentils or mushrooms sautéed with onions. Use a mix of mozzarella and cheddar for a gooey texture.
- Herb Crust: Add 2 tablespoons of chopped fresh herbs, such as parsley, dill, or chives, to the dough. Brush the baked crust with melted butter and sprinkle with flaky sea salt.
Storage and make-ahead
- Fridge
- Store in the refrigerator for up to 3 days in an airtight container. Reheat in the oven or toaster oven to maintain crispness.
- Freezer
- Freeze the baked poğaça whole or in slices for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 8-10 minutes, or until heated through and the crust is crisp again.
Store leftover poğaça in an airtight container at room temperature for up to 2 days. Reheat in a 350°F (175°C) oven for 5-10 minutes to restore crispness.
Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.
The dough can be prepared and refrigerated overnight after the first rise. Let it come to room temperature before shaping. The filling can also be cooked a day ahead and refrigerated; reheat gently before filling.
Serving ideas
Serve the poğaça warm, as the cheese is most stretchy and the crust is crispiest.
Place it on a large platter and let guests tear off pieces, or slice it into wedges. The dramatic pull-apart presentation makes it ideal for gatherings.
Pair with a simple green salad or pickles to cut through the richness. A side of yogurt or a tangy tomato salsa also complements the flavors. For a main course, serve with roasted vegetables or a lentil soup.

Clay-Cup Molded Meat and Cheese Poğaça

Ingredients
- 3 1/2 cups all-purpose flour
- 1 cup whole milk, warm
- 2 1/4 tsp active dry yeast
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- 1 tsp kosher salt
- 1 large egg, beaten (for wash)
- 1 lb ground beef
- 1 medium onion, finely chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 1/2 cups shredded mozzarella and kaşar cheese blend
Instructions
- In a small bowl, dissolve the yeast and sugar in the warm milk and let stand for 5 minutes until foamy. In a large bowl, combine the flour and salt. Add the yeast mixture and melted butter, and stir until a soft dough forms. Turn the dough out onto a floured surface and knead for 8 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- While the dough rises, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 6 minutes. Add the chopped onion and cook for 3 minutes more, until softened. Season with salt and pepper. Remove from heat and let cool slightly.
- Preheat the oven to 375°F (190°C). Punch down the risen dough and roll it into a 12-inch round. Drape the dough over the inverted terracotta clay bowl, pressing gently to mold it to the bowl's shape. Trim any excess dough, leaving a 1-inch overhang. Place the molded dough on a baking sheet.
- Spoon the cooked ground beef mixture into the center of the dough cup, spreading it evenly. Pile the shredded mozzarella and kaşar cheese over the meat, covering it completely.
- Gather the overhanging dough edges and pleat them together to seal the filling inside, forming a topknot. Pinch the seams to secure. Brush the entire dough surface with the beaten egg wash.
- Place the baking sheet in the preheated oven and bake for 20 minutes, or until the pastry is puffed and golden brown, and the cheese has browned and blistered in spots. The internal temperature of the meat should reach 160°F (71°C).
- Remove from the oven and let rest for 5 minutes. Carefully lift the poğaça off the clay bowl using the baking sheet or a spatula. Serve warm, tearing open the pastry to reveal the molten cheese and juicy meat.
