Before you start

Before beginning, ensure that all ingredients are measured and ready. Preheat your oven to 375°F (190°C) so that it is fully heated by the time assembly is complete. Prepare your workspace by clearing enough room for the rectangular baking dish and your ingredients.

If the corn tortillas are cold, warm them slightly to improve flexibility. Having your cheese shredded and your gravy measured in a pourable container will make the assembly phase efficient and stress-free.

Ingredients at a glance (3)
  • 12 corn tortillas
  • 3 cups shredded cheddar cheese, divided
  • 2 cups red chili gravy

Instructions

Rolling the Tortillas

  1. Prepare the Tortillas
Preheat the oven to 375°F (190°C). Lay out the corn tortillas and place a generous portion of shredded cheddar cheese in the center of each one. Carefully roll each tortilla tightly to enclose the cheese filling completely.
Look for The tortillas should be rolled snugly to ensure they hold their shape while baking.
Tip If the corn tortillas are brittle, warm them briefly in the microwave for ten seconds to make them pliable.

The tortillas should be neatly rolled with a consistent amount of cheese in the center. They should feel firm and hold their shape well. If you notice any tortillas cracking, re-warm them slightly. This phase is complete when all tortillas are filled and ready to be placed into the baking dish, creating a uniform, snug row that fills the container properly.

Assembling the Bake

  1. Assemble the Bake
Arrange the rolled tortillas in a snug row inside a large rectangular ceramic baking dish. Pour the red chili gravy evenly over the rolls, ensuring every tortilla is thoroughly coated to prevent drying out. Finally, sprinkle the remaining shredded cheddar cheese over the top of the dish.
Look for Ensure the gravy reaches the edges of the baking dish for even coverage.
Tip Use a silicone spatula to spread the gravy if it does not cover the tortillas naturally.

The baking dish should be filled with the rolled tortillas, which are now completely covered in the red chili gravy. A final layer of shredded cheddar should be evenly distributed over the top.

The dish should look moist and well-covered, with no dry spots visible. Check that the gravy has settled into the gaps between the tortillas for maximum flavor absorption.

Baking to Perfection

  1. Bake and Serve
Place the baking dish into the preheated oven and bake for approximately 25 minutes. The dish is ready when the cheese on top is melted and golden, and the chili gravy is bubbling around the edges. Remove from the oven and allow to rest for 5 minutes before serving.
Look for Look for a deep golden brown color on the cheese and vigorous bubbling of the sauce.
Tip Resting the dish allows the sauce to set slightly, making it much easier to portion with a spatula.

The dish is finished when the top layer of cheddar is melted, slightly golden, and bubbling. The red chili gravy should be actively simmering around the edges of the dish. The aroma will be savory and rich. Ensure the center is heated through before removing the dish from the oven. Allow the enchiladas to rest briefly before using a spatula to lift portions.

Common mistakes

A common mistake is overcrowding the pan with too much sauce, which can lead to soggy tortillas. Conversely, using too little sauce will result in dry edges. Ensure the tortillas are rolled tightly; loose rolls will cause the cheese to leak out.

Avoid rushing the baking time, as the sauce needs enough time to bubble and thicken. Finally, do not skip the resting period, as it allows the dish to firm up slightly, ensuring a beautiful presentation when serving.

How to tell it’s done

The dish is considered done when the cheese on top has achieved a golden brown, bubbly appearance and the red chili gravy is simmering vigorously. The internal temperature of the cheese-filled center should be hot throughout.

Because the ingredients are already cooked or require minimal heat, the primary indicator of doneness is the visual state of the sauce and the melted cheese. Allow the dish to rest for 5 minutes after removing it from the oven for the best texture.
