Before you start

Before beginning, ensure all ingredients are measured and ready on the counter. Clear enough space in the refrigerator to hold the 9x13 inch baking dish level. Remove the chocolate frosting from the pantry, and if it feels too stiff, set it aside at room temperature to soften slightly.

Prepare the baking dish by ensuring it is clean and dry. Having all components organized allows for a seamless assembly process, which is important since the pudding will start to thicken as soon as it is combined with the liquid.

Ingredients at a glance (5)
  • 1 box graham crackers
  • 2 packages instant vanilla pudding mix
  • 4 cups liquid for pudding
  • 1 can chocolate frosting
  • 1/4 cup chocolate curls

Instructions

Pudding preparation

  1. Prepare the pudding
In a large mixing bowl, combine the instant vanilla pudding mix with the required liquid. Whisk vigorously for two minutes until the mixture begins to thicken into a smooth, creamy consistency. Ensure no lumps remain in the base to guarantee a silky texture throughout the cake layers.
Look for The pudding should reach a thick, pourable yet stable consistency.
Tip Use chilled liquid directly from the refrigerator to ensure the instant pudding sets quickly and firmly.

The pudding mixture should be smooth, thick, and completely free of lumps. When the whisk is lifted, the pudding should drip off in a slow, steady stream. If it appears thin or runny, continue whisking for another minute or two, as the thickening agents need time to activate fully in the chilled liquid.

Layering the cake

  1. Assemble the layers
Arrange a single layer of graham crackers at the bottom of a 9x13 inch glass baking dish, breaking pieces as needed to cover the surface completely. Spread half of the prepared vanilla pudding evenly over the crackers. Repeat the process with a second layer of graham crackers and the remaining pudding. Finish with a final layer of graham crackers on top.
Look for The layers should be level and the crackers should completely cover the pudding.
Tip An offset spatula is the best tool for spreading the pudding without displacing the crackers underneath.

The layers should look uniform and neat. Check that the crackers cover the entire surface of the dish to create a solid foundation.

Each layer of pudding should be spread to the edges of the dish, ensuring that no gaps remain between the crackers and the sides. The final layer of graham crackers should be flat and level.

Frosting and chilling

  1. Frost and chill
Spread the chocolate frosting over the final layer of graham crackers, ensuring a smooth, glossy finish. Sprinkle the top with chocolate curls for decoration. Cover the dish and refrigerate for at least four hours, or ideally overnight, to allow the graham crackers to soften into a cake-like texture and the flavors to meld together perfectly.
Look for The frosting should be set and the crackers softened when tested with a fork.
Tip If the frosting is too firm, microwave it for 10 seconds to make it easier to spread over the crackers.

The chocolate topping should be spread into an even, glossy layer that covers the entire top surface. Use an offset spatula to smooth out any ridges or uneven patches. After refrigerating, the cake should be firm enough that a slice can be lifted cleanly from the dish without the layers sliding apart or falling over.

Common mistakes

A common mistake is using liquid alternatives that may prevent the instant pudding from setting properly. Always use the recommended liquid for the best texture.

Another error is failing to allow enough refrigeration time; if served too soon, the graham crackers will remain hard and the cake will not have the intended cohesive texture. Ensure the frosting is spread gently to avoid tearing the delicate cracker layers beneath.

How to tell it’s done

The cake is considered done when it has been refrigerated for at least four hours. The most important indicator of doneness is the texture of the graham crackers.

When a sharp knife or serving spatula is pressed into the cake, it should glide through all layers with ease, indicating that the crackers have softened sufficiently. The chocolate topping should appear set and firm to the touch, not runny or tacky.
