Before you start

Before starting, gather all ingredients. If you're making the olive salad ahead, do that first and let it sit. For the bread, choose a round loaf that is about 9 inches across.

Slice the top off and hollow out the bottom, leaving a shell about 1/2 inch thick. Have the meats and cheeses sliced thin. Preheat the oven to 350°F (175°C).

Ingredients at a glance (13)
  • 1/3 cup olive oil
  • 1 cup Castelvetrano olives, pitted and chopped
  • 1/2 cup kalamata olives, pitted and chopped
  • 1/2 cup giardiniera (pickled vegetables), chopped
  • 2 tbsp capers, drained
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 large round sesame Sicilian loaf (about 9 inches)
  • 1/4 lb mortadella, thinly sliced
  • 1/4 lb Genoa salami, thinly sliced
  • 1/4 lb ham, thinly sliced
  • 1/4 lb mozzarella, thinly sliced
  • 1/4 lb provolone, thinly sliced

Instructions

Prepare the Olive Salad and Bread

  1. Make the Olive Salad
In a medium bowl, combine the chopped Castelvetrano olives, kalamata olives, giardiniera, capers, minced garlic, dried oregano, and olive oil. Stir well to coat everything evenly. Let the mixture sit at room temperature while you prepare the bread.
Look for The olive salad should look glossy and well combined.
Tip Chopping the olives and giardiniera into similar sizes ensures even distribution.
  2. Hollow the Bread Loaf
Slice off the top of the sesame loaf about 1/2 inch from the top and set it aside. Use your hands or a serrated knife to hollow out the bottom half, leaving a 1/2-inch shell of bread. Reserve the removed bread for another use, such as breadcrumbs.
Look for The loaf should have a sturdy shell that holds the fillings.
Tip Don't hollow too thin or the bread may tear when filled.

The olive salad should be well combined, with the olives and giardiniera evenly coated in oil. The bread loaf should have a clean, hollowed shell with a removed top. The mixture should look vibrant and smell of garlic and oregano.

Layer the Fillings

  1. Layer Meats and Cheeses
In the hollowed loaf, layer half of the mortadella, then half of the Genoa salami, then half of the ham. Top with half of the mozzarella and half of the provolone. Repeat the layers with the remaining meats and cheeses.
Look for The layers should be even and reach the top of the loaf.
Tip Fold the slices slightly to fit the curve of the bread.
  2. Add the Olive Salad
Spoon the olive salad over the top layer of cheese, spreading it evenly to cover the entire surface. The olive oil will begin to soak into the bread and the layers below.
Look for The olive salad should be thickly spread, with some oil visible.
Tip Use a spatula to press the olive salad gently into the layers.
  3. Top with Bread Lid
Place the reserved top of the loaf over the filling. Press down gently to compact everything. Wrap the entire loaf tightly in aluminum foil, making sure it is completely sealed.
Look for The loaf should be well wrapped with no gaps.
Tip Pressing helps the layers meld together as it bakes.

The loaf should be filled to the brim with alternating layers of meats and cheeses, ending with olive salad on top. The olive salad should be spread evenly, and the top should be in place. The loaf should feel heavy and compact.

Bake and Serve

  1. Bake the Muffuletta
Heat the oven to 350°F (175°C). Place the wrapped loaf on a baking sheet and bake for 15 minutes, until the cheese is melted and the olive oil has soaked into the crust.
Look for The foil will be hot and the loaf will feel warm when pressed.
Tip Baking time may vary slightly; check that the center is hot.
  2. Unwrap and Slice
Carefully remove the loaf from the oven and unwrap the foil. Let it rest for 5 minutes before slicing. Use a serrated knife to cut thick wedges, showing the colorful layers.
Look for The layers should be visibly distinct and the cheese melted.
Tip For cleaner slices, use a sharp bread knife and gentle sawing motion.

After baking, the foil should be puffed slightly, and the loaf should feel warm. When unwrapped, the cheese should be melted and the olive salad glistening.

Slicing should reveal distinct layers of red, green, and white. The aroma of garlic and olives should be strong.

Common mistakes

One common mistake is using too much bread or not hollowing it enough, which results in a dry sandwich. Be generous when hollowing, leaving only a thin shell. Another is overloading with olive salad, which can make the sandwich soggy; use the amount specified.

Also, don't skip the foil wrap—it's essential for steaming and melting. Finally, let the sandwich rest for 5 minutes after baking to allow the cheese to set slightly, making it easier to slice.

How to tell it’s done

The muffuletta is done when the cheese has melted and the bread is warm throughout. To check, unwrap the foil and insert an instant-read thermometer into the center; it should read at least 165°F (74°C).

The olive oil should have soaked into the bread, making the crust slightly soft but still holding its shape. The sandwich should be hot and the cheese fully melted.
