Tips for success

When slicing the finished cake, use a long, thin, serrated knife and wipe it clean between every single cut. Dipping the blade in hot water and drying it thoroughly before each slice significantly improves the precision of the cuts, resulting in beautiful, clean edges that reveal the distinctive layers of the cake and cream filling.

To enhance the presentation, consider adding a light dusting of cocoa powder or decorative chocolate shavings to the top of the ganache before it sets. This adds visual interest and a slight bitterness that balances the sweetness of the marshmallow cream. Ensure these additions are applied while the ganache is still slightly tacky so they adhere properly to the surface of the cake.

Variations

  • Mocha Ding Dong Cake: Add two teaspoons of instant espresso powder to the chocolate ganache before heating. This provides a sophisticated coffee flavor that cuts through the sweetness of the marshmallow cream perfectly.
  • Peppermint Infused Cake: Add a half teaspoon of peppermint extract to the marshmallow cream filling. Top the ganache with crushed peppermint candies for a festive, crunchy finish that elevates the classic flavor.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
The cake can be frozen for up to 1 month if wrapped tightly in plastic wrap and foil.
Reheat
Allow to thaw in the refrigerator overnight before serving; do not reheat.

Store the cake in an airtight container to prevent it from absorbing odors from the refrigerator. For the best flavor and texture, consume the cake within three days of assembly.

If the cake must be kept longer, ensure it is well-wrapped to maintain moisture and prevent the sponge from drying out. Keep the cake away from strong-smelling items like onions or garlic, as the cream filling can easily absorb these scents.

This cake is ideal for making ahead, as the flavors develop and the layers stabilize after sitting in the refrigerator for several hours or overnight.

Prepare the cake layers and the ganache up to two days in advance and store them separately at room temperature. Assemble the cake on the day of serving or the night before to ensure the best possible texture and appearance for your guests.

Serving ideas

Serve the cake chilled directly from the refrigerator for the best textural experience, as the ganache and filling are designed to be firm. Use a sharp, hot knife to slice the cake into uniform squares, ensuring that each piece showcases the beautiful layers of sponge and cream.

Present the slices on individual dessert plates, optionally accompanied by a small dollop of fresh whipped cream or a few fresh berries to add a touch of brightness.

Because this is a rich, indulgent dessert, consider serving smaller portions to your guests. The intensity of the chocolate and the sweetness of the marshmallow cream make it very satisfying, so a modest slice is usually sufficient.

If you are serving this for a special occasion, consider placing the entire cake on a pedestal stand to showcase the layers before slicing, which adds a touch of elegance to the service.

Frequently asked questions

Can the cake be made without a piping bag?
Yes, a heavy-duty plastic freezer bag works as an excellent substitute. Simply fill the bag with the marshmallow cream, seal it tightly, and snip off one of the bottom corners to create a makeshift piping tool that provides excellent control for layering the cream.
Why does the ganache lose its shine?
The ganache may lose its shine if it is overheated during preparation or if it is stirred too vigorously after the chocolate has melted. Always melt the chocolate and cream gently over low heat or in short bursts in the microwave, and stir just until combined to maintain that beautiful, mirror-like finish.
How can the cake layers be sliced perfectly?
To achieve perfectly even layers, chill the cake thoroughly before slicing. Use a long, sharp serrated knife and mark the sides of the cake with toothpicks at the desired height to serve as a guide. Cut with a gentle sawing motion, letting the knife do the work without pressing down too hard.

Ingredients

  • 1 recipe chocolate sponge cake, store-bought or made ahead
  • 2 cups marshmallow vanilla cream
  • 1 cup glossy chocolate ganache

Instructions

  1. Using a long serrated knife, carefully slice the pre-made chocolate sponge cake horizontally into two even layers. Place the bottom layer onto a clean work surface or a white platter to prepare for the filling.
  2. Transfer the marshmallow vanilla cream into a piping bag. Pipe an even, thick layer of the cream over the surface of the bottom cake layer. Use an offset spatula to smooth the cream out to the edges, ensuring a consistent thickness throughout. If preparing a cooked custard base for this cream, ensure it reaches 160°F (71°C) to be safe.
  3. Place the second cake layer on top of the cream. Pour the glossy chocolate ganache over the top of the cake, using an offset spatula to spread it gently until it covers the top and sides completely. Allow the cake to set in the refrigerator for at least one hour before slicing.
Contains: gluten, eggs, milk
Food safety: The marshmallow cream contains eggs that are not cooked through. Use pasteurised eggs for pregnant women, young children, older adults and anyone with a weakened immune system.
