Tips for success

For the fluffiest cream, make sure the mascarpone and heavy cream are very cold. Whip on medium speed and stop the moment the mixture reaches stiff peaks; overwhipping can make it grainy.

If you do not have a piping bag, use a zip-top bag with a corner snipped off. The cream is forgiving enough for a rustic swirl.

When grating the pistachio white chocolate, use the large holes of a box grater and handle the chocolate gently to avoid melting.

If the chocolate is too soft, freeze it for 10 minutes first. The grated chocolate can be stirred into the cream or sprinkled between layers for extra texture.

Variations

  • Chocolate Pistachio: Replace the raspberries with chopped dark chocolate and use a chocolate sponge disc. The rosewater can be reduced to 1 tablespoon for a subtler floral note.
  • Citrus Rose: Add the zest of one orange to the mascarpone cream and use orange segments instead of raspberries. Top with candied orange peel and pistachios.
  • Berry Medley: Use a mix of raspberries, blackberries, and blueberries for a more varied berry flavor. Adjust the sugar in the cream to balance the tartness.
  • Vegan Option: Use a vegan sponge disc, vegan cream cheese, and coconut cream whipped with rosewater. Omit the white chocolate or use dairy-free white chocolate.

Storage and make-ahead

Fridge
Store leftover cake in the refrigerator, covered, for up to 2 days. The cream may soften slightly but the flavor remains good.
Freezer
Freeze the unassembled sponge disc and cream separately for up to 1 month. Thaw overnight in the refrigerator before assembling.
Reheat
This cake is served cold; no reheating is needed. If frozen, thaw in the refrigerator before serving.

Store the assembled cake in the refrigerator for up to 2 days. Cover loosely with plastic wrap or a cake dome to prevent drying. The raspberries may release some juice over time, so the cake is best enjoyed within 24 hours.

The mascarpone cream can be made up to 2 days ahead and kept refrigerated in an airtight container. The sponge disc can be bought or made a day ahead.

Assemble the cake no more than 6 hours before serving to keep the sponge from absorbing too much moisture.

Serving ideas

Serve the cake chilled or at cool room temperature. Let it sit out for 10 minutes before slicing to take the chill off the cream.

Pair with a cup of Earl Grey tea or a glass of sparkling wine for a special treat. The floral and nutty flavors shine when the cake is not too cold.

For a neat presentation, use a warm, dry knife to cut each slice. Wipe the blade between cuts. The cake is rich, so a thin slice is plenty. Garnish each plate with a few extra raspberries and a sprinkle of rose petals if desired.

Frequently asked questions

Can this cake be made without a ring mold?
Yes, a springform pan or a cake pan with removable bottom works. Line the sides with parchment paper for easy release. The ring mold is not essential, but it helps create even layers and clean edges.
What is the best way to slice the cake cleanly?
Use a long serrated knife and dip it in hot water, then dry it before each cut. Wipe the blade between slices to remove cream residue. Chilling the cake for at least 30 minutes before slicing also helps.
Can the rosewater be omitted or substituted?
Rosewater can be omitted, but the cake will lose its floral character. For a substitute, use 1 teaspoon vanilla extract plus 1/4 teaspoon almond extract. Start with less and add to taste, as extracts are stronger.
How far ahead can this cake be assembled?
The cake can be assembled up to 6 hours before serving and kept refrigerated. The sponge may absorb moisture from the cream over time, so avoid assembling more than a day ahead. The cream and sponge can be prepared separately up to 2 days ahead.
Can frozen raspberries be used?
Frozen raspberries can be used, but they should be thawed and patted very dry to avoid watering down the cream. They are softer than fresh, so handle gently. Fresh raspberries are preferred for the best texture and appearance.

Homemade Classic Espresso Mascarpone Tiramisu Cake

Freshly plated classic espresso mascarpone tiramisu cake ready to serve.

Ingredients

  • 1 disc green pistachio sponge (store-bought or made ahead)
  • 4 oz pistachio white chocolate, grated
  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy cream
  • 2 tbsp rosewater
  • 1/2 cup confectioners' sugar
  • 2 cups fresh raspberries, halved
  • 1/2 cup shelled pistachios, crushed
  • 2 tbsp dried rose petals

Instructions

  1. Grate the pistachio white chocolate on a box grater into a bowl. Set aside. Slice each raspberry in half and coarsely chop any larger ones. Keep the raspberries in a separate bowl.
  2. Place the shelled pistachios in a zip-top bag and crush them with a rolling pin or the bottom of a heavy pan until they are coarse crumbs. Set aside.
  3. In a large bowl, combine the mascarpone, heavy cream, rosewater, and confectioners' sugar. Beat with an electric mixer on medium-high speed until stiff peaks form, about 2 to 3 minutes. Do not overbeat.
  4. Place the pistachio sponge disc inside the ring mold on a serving plate. Pipe a thick layer of rosewater mascarpone cream over the sponge. Arrange the halved raspberries evenly on top of the cream. Add another layer of cream over the raspberries, smoothing with an offset spatula.
  5. Refrigerate the assembled cake in the ring for at least 30 minutes to let the cream set. This makes slicing cleaner.
  6. Remove the ring. Scatter the crushed pistachios and dried rose petals across the top of the cake, pressing lightly so they stick.
  7. Using a serrated knife, slice a thick triangular wedge. Lift the slice with a cake server to show the layered interior. Serve immediately.
