Before you start

Ensure the chocolate cake is fully baked and cooled to room temperature. Prepare the whipped cream filling in advance if making it from scratch, keeping it chilled until the moment of assembly.

Have the offset spatula and a small saucepan ready to begin the final assembly and ganache preparation.

Ingredients at a glance (4)
  • 1 recipe chocolate cake, baked and cooled (store-bought or made ahead)
  • 2 cups whipped cream filling
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

Cake Base Preparation

  1. Prepare the cake base
Place the prepared chocolate cake layer on a flat surface or in your baking pan. Ensure the cake is completely cooled to room temperature before applying any filling to prevent the cream from melting.
Look for The cake should be firm and cool to the touch.
Tip If the cake is uneven, use a serrated knife to level the top before filling.

The cake must be perfectly flat and cold. Any residual heat will compromise the integrity of the cream layer.

Check that the cake is stable on the board or plate to prevent it from sliding during the spreading process.

Cream Filling Application

  1. Add the cream filling
Spread the whipped cream filling evenly over the top of the chocolate cake. Use an offset spatula to create a smooth, consistent layer that reaches all the way to the edges of the cake.
Look for The cream layer should be smooth and uniform in thickness.
Tip Chill the cake for 20 minutes after adding the cream for easier ganache application.

The cream layer should be perfectly uniform. Use the offset spatula to check for gaps or uneven mounds. Once smoothed, the cake should look like a clean, level canvas ready for the final chocolate coating.

Ganache Finishing

  1. Apply the ganache
Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips, let it sit for two minutes, then whisk until smooth. Pour the glossy ganache over the cream layer and spread it gently using an offset spatula until fully covered.
Look for The ganache should be glossy, smooth, and pourable.
Tip Pour the ganache starting from the center and let it flow toward the edges.

The ganache must be poured while still warm but thick enough to cover the surface without running off the sides excessively. Check that the edges are fully coated and the top is mirror-like and completely smooth.

Common mistakes

A common mistake is applying the ganache while the cream filling is too warm, which leads to the layers bleeding together.

Always ensure the cake and filling are chilled properly before adding the final chocolate layer. Another error is overheating the cream for the ganache, which can cause the chocolate to seize or become grainy.

How to tell it’s done

The cake is done when the ganache has set firmly enough to be sliced cleanly without smearing.

This usually takes about one hour at room temperature or 30 minutes in the refrigerator. The surface should appear glossy and smooth, with no remaining liquid spots or separation.
