Before you start

Before you begin, ensure the chocolate sponge cake is completely cool to the touch. Rolling a warm sponge will cause the cream filling to melt instantly, ruining the texture of the dessert. Have your parchment paper ready on a clean workspace and ensure your electric mixer is clean and dry.

Preparing your station with all ingredients measured and ready will make the assembly process much smoother and more efficient, ensuring the cream remains cold throughout the entire rolling phase.

Ingredients at a glance (5)
  • 1 prepared chocolate sponge cake, cooled
  • 1 cup heavy whipping cream, chilled
  • 1 tbsp cocoa powder, for dusting
  • 1/2 cup chocolate ganache, warm
  • 1 tbsp chocolate shavings

Instructions

Whipping the cream

  1. Prepare the filling
In a large chilled bowl, whip the heavy whipping cream using an electric mixer until stiff peaks form. Ensure the cream is cold to achieve the best volume and stability for the filling.
Look for The cream holds stiff peaks when the beater is lifted.
Tip Do not over-whip the cream or it will turn into butter.

The cream should be smooth, thick, and hold firm, stiff peaks when the mixer is lifted. It should look glossy and feel very cold. If the cream appears lumpy or starts to look yellow, it has been over-whipped and will not spread smoothly over the cake sponge.

Rolling the cake

  1. Assemble the roll
Lay the chocolate sponge cake flat on a piece of parchment paper dusted with cocoa powder. Spread the whipped cream evenly over the surface using an offset spatula, leaving a small border at the edges. Roll the cake tightly from one end to the other, using the parchment paper to assist in maintaining a uniform shape.
Look for The cream is spread in a smooth, even layer.
Tip A tight roll prevents air pockets and ensures a clean slice.

The cake should be tightly wound, with the cream filling distributed evenly from end to end. The parchment paper should be removed carefully to avoid tearing the delicate sponge. The roll should feel firm and look uniform, with no large gaps between the layers of cake and cream.

Finishing the exterior

  1. Finish and chill
Drizzle the warm chocolate ganache over the top of the roll, allowing it to drip down the sides. Sprinkle with chocolate shavings. Refrigerate the cake for at least one hour before slicing to allow the structure to set properly. Once set, use a sharp serrated knife to cut through the roll for clean, professional slices.
Look for The ganache is set and the cake holds its shape perfectly when sliced.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Wipe the knife blade with a warm cloth between cuts for the cleanest possible appearance.

The ganache should be smooth, glossy, and cover the entire top of the roll evenly. The chocolate shavings should be distributed uniformly for a clean, professional look.

The entire assembly should feel solid to the touch after the chilling period in the refrigerator, ready for precise, clean slicing.

Common mistakes

A common mistake is rolling the cake while it is still too warm, which results in the cream melting and leaking out. Another error is over-whipping the cream, which creates a grainy texture that is difficult to spread evenly.

Avoid using too much filling, as it can cause the cake to bulge and crack during the rolling process. Finally, failing to chill the roll properly before slicing will result in messy, uneven pieces that do not showcase the beautiful swirl of the filling.

How to tell it’s done

The cake is done when the sponge is springy to the touch and the ganache has cooled enough to hold its shape on the surface. When slicing, the interior should show distinct, clean layers of sponge and cream without any bleeding.

The internal temperature of any egg-based components in the sponge should reach 160°F (71°C) during the initial baking phase, ensuring the cake is fully cooked and safe to consume before assembly begins.

  • Egg dishes: 160°F (71°C) in the thickest part
