Before you start

Before beginning, ensure your workspace is clean, dry, and free of moisture, as water can cause the butterscotch to seize. Have all ingredients measured and ready to go, as the butterscotch will harden relatively quickly once it is melted.

Ensure your baking sheet is lined with parchment paper, which is essential for easy removal of the finished haystacks without damaging their shape or losing any of the coating.

Ingredients at a glance (3)
  • 5 oz crunchy chow mein noodles
  • 1 cup butterscotch chips
  • 1/2 cup salted peanuts

Instructions

Preparation phase

  1. Prepare the workspace
Line a large baking sheet with parchment paper to ensure the haystacks release easily once cooled. Arrange the crispy chow mein noodles in small, individual piles across the prepared baking sheet. Using a flat surface like a baking sheet makes the process efficient and ensures consistent sizing for each haystack.
Look for Noodles are arranged in uniform piles.
Tip Ensure the baking sheet is on a flat, stable surface for easy maneuvering.

At the end of this phase, the noodles should be portioned into uniform piles on the parchment-lined tray. Each pile should be distinct and ready to receive the coating. Ensure the tray is placed on a flat, level surface to prevent the piles from shifting or sliding while you prepare the melted butterscotch mixture for the next step.

Melting phase

  1. Melt and combine
Place the butterscotch chips in a microwave-safe bowl. Heat in short intervals of 30 seconds, stirring thoroughly between each burst, until the chips are completely smooth and melted. Be careful not to overheat the butterscotch, as it can seize and become grainy or lose its glossy sheen if scorched.
Look for Butterscotch is smooth and fluid.
Tip Stirring well ensures even heat distribution throughout the melted mixture.

The butterscotch should be completely melted, smooth, and glossy, with no visible lumps or unmelted chips remaining. The texture should be fluid enough to pour easily from a spoon but thick enough to cling to the noodles immediately upon contact. If it appears too thick, stir it for a few more seconds to release residual heat.

Assembly phase

  1. Assemble and set
Spoon the melted butterscotch over each pile of chow mein noodles, ensuring they are well coated. Immediately tuck the salted peanuts into the tops of the piles while the butterscotch is still warm and sticky. Allow the haystacks to rest at room temperature until the butterscotch has completely set and hardened.
Look for Butterscotch is firm to the touch.
Tip Work quickly so the butterscotch does not harden before you add the peanuts.

The haystacks should be neatly coated with butterscotch and topped with peanuts. As they sit, the butterscotch will gradually lose its sheen and become firm to the touch.

Once they are no longer tacky and do not collapse when gently lifted, they are ready to be served or stored for later enjoyment, showcasing their characteristic crunchy texture.

Common mistakes

Avoid overheating the butterscotch in the microwave, as this is the most common cause of a grainy or separated texture. Always stir between every heating interval to distribute the heat evenly.

Another mistake is using too much butterscotch; the goal is to coat the noodles lightly so they stick together, not to drown them in a heavy layer of sauce, which can make them overly dense and chewy.

How to tell it’s done

The haystacks are done when the butterscotch coating has fully cooled and hardened to a firm, non-sticky touch. They should hold their shape when lifted from the parchment paper.

If the room is particularly warm, you may need to place the baking sheet in a cool area or the refrigerator for a few minutes to encourage the butterscotch to set properly, ensuring a crisp finish.
