Before you start

Before beginning, ensure all ingredients are measured and ready. If using dry lasagna noodles, boil them in salted water until they are just al dente, then drain them carefully.

Preheat the oven to 375°F (190°C) so it is ready for baking. Have your baking dish clean and dry, and ensure your workspace is organized for the assembly process, which requires clear staging for the sauce, cheese, and noodles.

Ingredients at a glance (6)
  • 1 lb meat sauce
  • 24 oz marinara sauce
  • 12 oz lasagna noodles, boiled
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • fresh parsley, for serving

Instructions

Meat Sauce Preparation

  1. Prepare the meat sauce
Heat a large skillet over medium-high heat. Add the meat sauce and cook, breaking it apart with a spatula, until it is browned and reaches an internal temperature of 160°F (71°C). Stir in the marinara sauce and simmer for 5 minutes.
Look for The sauce should be bubbling and slightly thickened.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the meat is browned thoroughly to develop the best flavor for the sauce.

The meat sauce should be rich, fragrant, and have a deep color. The meat must be cooked through until it reaches 160°F (71°C), and the sauce should have thickened slightly from the simmering process. It should smell savory and aromatic, with the tomato sauce fully incorporated into the meat juices.

Layering the Dish

  1. Layer the lasagna
Spread a thin layer of meat sauce on the bottom of a 9x13-inch baking dish. Place a layer of boiled lasagna noodles over the sauce. Spread a portion of ricotta cheese over the noodles, then top with more meat sauce and shredded mozzarella. Repeat these layers until all ingredients are used, finishing with a generous layer of mozzarella.
Look for The dish should be filled with alternating layers.
Tip Do not overstuff the layers to ensure the lasagna cooks evenly.

Each layer should be spread evenly to ensure consistency. The noodles should overlap slightly to create a cohesive structure.

Check that the ricotta is distributed in a thin, even layer and that the mozzarella is sprinkled generously over the top to cover the meat sauce completely before it goes into the oven.

Baking to Perfection

  1. Bake and garnish
Preheat the oven to 375°F (190°C). Place the baking dish in the oven and bake for 30 minutes, or until the cheese is melted and bubbling with a golden crust. Remove from the oven and let it rest for 10 minutes before garnishing with fresh parsley.
Look for The top should be golden brown and the sauce bubbling at the edges.
Tip Letting the lasagna rest is essential for clean slices when serving.

At the end of the baking phase, the lasagna should be bubbling vigorously at the edges. The cheese on top should have developed a uniform golden-brown crust. The aroma of baked cheese and savory tomato sauce should be prominent in the kitchen, indicating that the flavors have fully melded together.

Common mistakes

A common mistake is using too much sauce, which can make the lasagna watery, or not using enough, which can lead to dry, brittle noodles.

Avoid overcooking the noodles before assembly, as they will continue to soften in the oven. Ensure the oven is fully preheated before putting the dish in to guarantee that the cheese melts properly before the pasta overcooks.

How to tell it’s done

The lasagna is done when the top is golden brown and the cheese is fully melted and bubbling. The internal temperature of the dish should be hot throughout, ensuring the meat sauce is heated to at least 160°F (71°C).

Let the lasagna rest for 10 minutes before cutting to allow the layers to settle, which ensures each portion holds its shape when served.

  • Ground meat: 160°F (71°C) in the thickest part
