Before you start

Before starting, ensure the pistachio sponge disc is ready; if using a store-bought one, take it out of the refrigerator to come to room temperature. Grate the pistachio white chocolate and set aside.

Halve the raspberries and crush the pistachios. Have the ring mold, piping bag, and serving plate ready. Chill the bowl and beaters for the cream to help it whip faster.

Ingredients at a glance (9)
  • 1 disc green pistachio sponge (store-bought or made ahead)
  • 4 oz pistachio white chocolate, grated
  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy cream
  • 2 tbsp rosewater
  • 1/2 cup confectioners' sugar
  • 2 cups fresh raspberries, halved
  • 1/2 cup shelled pistachios, crushed
  • 2 tbsp dried rose petals

Instructions

Prep the Ingredients

  1. Prepare the pistachio white chocolate and raspberries
Grate the pistachio white chocolate on a box grater into a bowl. Set aside. Slice each raspberry in half and coarsely chop any larger ones. Keep the raspberries in a separate bowl.
Look for The chocolate is finely grated and the raspberries are halved.
Tip Chill the chocolate for 10 minutes before grating for cleaner shavings.
  2. Crush the pistachios
Place the shelled pistachios in a zip-top bag and crush them with a rolling pin or the bottom of a heavy pan until they are coarse crumbs. Set aside.
Look for Pistachios are crushed into small, uneven pieces.
Tip Leave some larger pieces for texture in the topping.

At the end of this phase, the chocolate is grated, the raspberries are halved, and the pistachios are crushed.

The kitchen smells faintly of pistachio and the colors are vibrant: pale green shavings, ruby berries, and green crumbs. Everything is ready to move on to the cream.

Make the Cream and Assemble

  1. Make the rosewater mascarpone cream
In a large bowl, combine the mascarpone, heavy cream, rosewater, and confectioners' sugar. Beat with an electric mixer on medium-high speed until stiff peaks form, about 2 to 3 minutes. Do not overbeat.
Look for The cream holds a firm peak when the beater is lifted.
Tip Use cold cream and mascarpone for the best volume.
  2. Assemble the cake layers
Place the pistachio sponge disc inside the ring mold on a serving plate. Pipe a thick layer of rosewater mascarpone cream over the sponge. Arrange the halved raspberries evenly on top of the cream. Add another layer of cream over the raspberries, smoothing with an offset spatula.
Look for The cake has three distinct layers: sponge, cream, raspberries.
Tip Pipe the cream in a spiral for even coverage.
  3. Chill the assembled cake
Refrigerate the assembled cake in the ring for at least 30 minutes to let the cream set. This makes slicing cleaner.
Look for The cream is firm and the cake holds its shape.
Tip Chilling also helps the layers adhere.

The mascarpone cream is thick and holds a peak. The cake is assembled in the ring, with the sponge, cream, and raspberries in distinct layers. The top is smooth and the sides are even. The cake is chilling in the refrigerator.

Finish and Serve

  1. Top with pistachios and rose petals
Remove the ring. Scatter the crushed pistachios and dried rose petals across the top of the cake, pressing lightly so they stick.
Look for The top is covered with green pistachio bits and pink petals.
Tip Add the toppings just before serving to keep them crisp.
  2. Slice and serve
Using a serrated knife, slice a thick triangular wedge. Lift the slice with a cake server to show the layered interior. Serve immediately.
Look for The slice shows distinct layers of sponge, cream, and raspberries.
Tip Wipe the knife between cuts for clean slices.

The chilled cake is topped with crushed pistachios and dried rose petals, creating a textured, colorful surface. A slice cut with a serrated knife shows clean layers of green sponge, white cream, and red raspberries. The slice holds its shape and looks beautiful on the plate.

Common mistakes

Overbeating the mascarpone cream can cause it to curdle; stop as soon as stiff peaks form. If the cream is too soft, chill it for a few minutes before piping.

Slicing the cake too soon after assembly can make it messy; always chill for at least 30 minutes. Using a dull knife can squish the layers; use a serrated knife and wipe it clean between cuts.

How to tell it’s done

The cake is done when the cream holds stiff peaks and the assembled cake is chilled and firm. There is no baking involved, so no internal temperature is needed.

The cream should be smooth and spreadable, and the layers should be visible when sliced. The top should be evenly covered with pistachios and rose petals.
