Tips for success
For the most flavorful sauce, use fresh lime juice rather than bottled. Roll the limes on the counter before juicing to get more juice.
Chop the cilantro finely, including the stems, and stir it into the lime juice just before pouring. The chili powder can be adjusted to taste, but a teaspoon provides a gentle warmth without overwhelming the dish.
To ensure even cooking, choose pork chops of similar thickness. If some are thicker, you can pound them gently to even them out.
Let the pork chops sit at room temperature for 15 minutes before baking, but no longer than 30 minutes, to help them cook evenly. Always use an instant-read thermometer to check doneness rather than relying on time alone.
Variations
- Add vegetables: Add sliced bell peppers, red onion, or zucchini to the baking dish along with the corn. They will cook in the sauce and become tender and flavorful. Increase the baking time by 5 minutes if adding extra vegetables.
- Spicy version: Increase the chili powder to 2 teaspoons or add a pinch of cayenne pepper for extra heat. You can also add a finely chopped jalapeño to the sauce for a fresh, spicy kick.
- Herb swap: Replace the cilantro with fresh parsley or a mix of parsley and mint for a different herbaceous note. The lime and chili will still shine, but the flavor profile will change slightly.
- Chicken option: Use bone-in, skin-on chicken thighs instead of pork chops. Bake at 375°F (190°C) until the chicken reaches an internal temperature of 165°F (74°C), about 35-40 minutes.
Storage and make-ahead

- Freezer
- Freeze leftovers in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pork chops and corn can be reheated in the microwave or in a 350°F (175°C) oven until warmed through. The sauce will solidify when chilled but will melt again when reheated. For best texture, reheat gently to avoid drying out the pork.
The cilantro lime sauce can be prepared up to 1 day in advance. Combine the lime juice, chopped cilantro, and chili powder in a small bowl, cover, and refrigerate.
The pork chops can be seasoned with salt and pepper and kept in the refrigerator for up to 24 hours before baking. Assemble the dish just before baking, adding the butter right before it goes into the oven.
Serving ideas
Serve the pork chops and corn hot from the oven, spooning the pan sauce over the top. This dish pairs well with rice, quinoa, or crusty bread to soak up the delicious sauce.
A simple green salad with a light vinaigrette would balance the richness. For a complete meal, add a side of steamed green beans or roasted asparagus.
For a heartier meal, serve the pork chops and corn over mashed potatoes or polenta. The sauce acts as a gravy, soaking into the starch. If there are leftovers, the pork can be sliced and used in tacos or sandwiches. The corn can be cut off the cob and added to salads or grain bowls. This recipe is versatile and delicious.

Cilantro Lime Pork Chop and Corn Bake

Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 8 mini corn cobs (or 4 regular corn cobs, halved)
- 1/4 cup fresh lime juice
- 1/2 cup chopped fresh cilantro
- 1 tsp chili powder
- 4 tbsp unsalted butter, sliced
- salt to taste
- black pepper to taste
Instructions
- Heat the oven to 375°F (190°C). Pat the pork chops dry with paper towels and season both sides with salt and pepper. Place the pork chops in a single layer in a large baking dish, tucking the mini corn cobs around and between them.
- In a small bowl, stir together the lime juice, chopped cilantro, and chili powder. Pour the mixture evenly over the pork chops and corn, making sure the sauce reaches all the pieces.
- Place a slice of butter on top of each pork chop. The butter will melt and baste the meat as it bakes, enriching the sauce.
- Place the dish in the oven and bake for 25 to 30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) when checked with an instant-read thermometer inserted into the thickest part of the meat, avoiding the bone. The corn should be tender and the butter bubbling. Let it rest for 3 minutes before slicing.
- Remove the dish from the oven and let the pork chops rest in the dish for at least 3 minutes. The internal temperature will rise slightly during this time, and the juices will redistribute through the meat.
- Using a spatula, lift each pork chop and arrange it on a serving platter with the corn. Spoon the remaining cilantro lime butter sauce from the dish over the top. Serve hot.
