Tips for success

To achieve an even deeper flavor, consider seasoning the chicken and letting it sit in the refrigerator for a few hours before roasting. This technique, known as dry-brining, allows the salt to penetrate the meat thoroughly, resulting in a more flavorful and succulent final dish.

Just remember to let the bird come to room temperature for no more than 30 minutes before placing it into the hot oven to ensure the cooking time remains consistent.

If you notice the breast skin browning much faster than the rest of the chicken, you can loosely tent a small piece of aluminum foil over the breast area.

This simple trick protects the delicate skin from burning while allowing the legs and thighs, which require more heat to cook through, to continue roasting. Always remove the foil for the final ten minutes of cooking to ensure the breast skin finishes with a beautiful, uniform golden color.

Variations

  • Garlic Infused: Tuck several whole, peeled garlic cloves under the chicken skin and scatter more around the pan before roasting for a deep, savory garlic flavor that pairs perfectly with the lemon.
  • Spicy Herb: Add a teaspoon of crushed red pepper flakes to the herb mixture for a subtle, warming heat that contrasts beautifully with the brightness of the roasted lemons.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze shredded or sliced chicken in freezer-safe bags for up to 2 months.
Reheat
Reheat in a 350°F oven until warmed through, adding a splash of broth to keep it moist.

Store any leftover chicken in an airtight container to maintain its moisture. Remove the meat from the bone before storing to save space and make it easier to reheat for future meals.

Keep the caramelized lemon slices in the same container, as they add wonderful flavor to the meat if consumed within a day or two. Proper storage ensures the chicken remains safe and delicious for up to three days when kept in the coldest part of your refrigerator.

While this chicken is best enjoyed fresh from the oven, you can perform some prep work ahead of time. You can wash, dry, and season the chicken, then store it covered in the refrigerator for up to 24 hours before you plan to roast it.

Simply remove it from the fridge to reach room temperature for 30 minutes before roasting. This method saves time on the day of your event and allows the flavors of the herbs to permeate the meat more effectively.

Serving ideas

For a beautiful presentation, place the carved chicken slices on a warm platter, tucking the caramelized lemon slices between the pieces. The contrast of the golden-brown skin against the bright, browned lemons creates a visually appealing centerpiece. Serve immediately while the chicken is still steaming to ensure the best texture and flavor for your guests.

Complement this roast with simple sides that do not compete with the bold, zesty flavors of the lemon and herbs. Roasted root vegetables, a light green salad with a citrus vinaigrette, or creamy mashed potatoes are excellent choices. The goal is to provide a meal that highlights the chicken as the star of the show while offering textures that contrast nicely with the crispy skin.

Frequently asked questions

Can this chicken be roasted in a convection oven?
Yes, a convection oven is excellent for this recipe. Because of the fan circulation, the skin will likely become even crispier. Reduce the oven temperature by 25°F and monitor the chicken closely, as it may cook faster than in a standard conventional oven.
Why is it necessary to let the chicken rest?
Resting is crucial because it allows the internal juices to redistribute throughout the meat. If you carve the chicken immediately, the juices will run out onto the cutting board, resulting in dry, less flavorful meat. Resting ensures every bite remains succulent.
Is it possible to use dried herbs instead of fresh?
Yes, dried herbs can be used if fresh are not available. Use about one-third the amount of dried herbs compared to fresh, as they are more concentrated. Rub them into the chicken as you would the fresh herbs to help release their essential oils.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 large lemons, sliced into rounds
  • 2 tbsp fresh herbs, such as rosemary and thyme

Instructions

  1. Preheat the oven to 400°F (200°C). Pat the chicken completely dry with paper towels to ensure crispy skin. Arrange the chicken in the roasting pan and distribute the herbs over the skin. Keep the chicken in the refrigerator until ready to roast, removing it no more than 30 minutes before placing it in the oven.
  2. Place the lemon slices around the chicken in the roasting pan. Roast the chicken in the center of the oven until the skin is deep golden brown and the internal temperature of the thickest part of the breast reaches 165°F (74°C).
  3. Once the internal temperature reaches 165°F (74°C), remove the pan from the oven. Let the chicken rest for at least 15 minutes before carving to allow the juices to redistribute. Slice the breast and serve with the warm, caramelized lemon slices.
