Before you start

Before beginning the assembly, ensure your workspace is clean and organized. Have your parchment paper ready on a sturdy baking sheet to prevent sticking. Clear enough space in your freezer to accommodate the tray flat.

If you are using a store-bought cheesecake, ensure it is thoroughly chilled, as a warm cheesecake will be difficult to cube cleanly. Have all your dipping ingredients measured and ready to go, as the dipping process moves very quickly once the chocolate is melted and the cheesecake is ready.

Ingredients at a glance (5)
  • 1 whole New York style vanilla bean cheesecake, store-bought or made ahead
  • 1 cup 60% dark chocolate chips
  • 2 tbsp coconut oil
  • 1/4 cup crushed toasted almonds
  • optional salted caramel sauce, for drizzling

Instructions

Preparation and Freezing

  1. Slice and Prepare
Place the chilled cheesecake on a stable cutting board. Using a sharp chef's knife, cut the cheesecake into uniform one-inch cubes. Carefully insert a wooden craft stick into the center of each cube to create a handle. Arrange the bites on a parchment-lined baking sheet, ensuring they do not touch.
Look for The cheesecake should be firm and chilled to ensure clean cuts without crumbling.
Tip Dip the knife in hot water and wipe it dry between cuts for perfectly smooth edges.
  2. Freeze
Transfer the baking sheet to the freezer. Allow the cheesecake cubes to firm up for exactly forty-five minutes. This step is essential so the chocolate coating sets instantly upon contact with the cold surface of the cheesecake.
Look for The cheesecake should feel solid to the touch before dipping.
Tip Do not exceed one hour of freezing, or the cheesecake may become too hard to bite through comfortably.

The cheesecake cubes should be uniform in size and firmly attached to the wooden sticks. They must be cold and solid, showing no signs of softening at the edges. Ensure they are spaced out on the parchment paper so they do not freeze together, which would make individual removal difficult when you are ready to start the dipping process.

Melting the Coating

  1. Prepare Coating
Combine the dark chocolate chips and coconut oil in a heatproof bowl set over a saucepan of simmering water. Stir gently until the mixture is completely smooth and glossy. Remove from the heat and stir in the crushed toasted almonds.
Look for The chocolate should be completely melted and smooth, with no lumps remaining.
Tip Ensure no water droplets enter the chocolate, as this will cause it to seize and lose its gloss.

The chocolate and coconut oil mixture must be completely smooth and have a pourable, glossy consistency. The crushed almonds should be evenly distributed throughout the chocolate.

Check that the mixture is not too hot, as excessive heat can melt the cheesecake cubes instantly upon dipping, causing them to lose their shape before the shell has a chance to set.

Dipping and Finishing

  1. Dip and Set
Remove the cheesecake bites from the freezer. Quickly dip each cube into the melted chocolate mixture, swirling to coat evenly. Allow the excess chocolate to drip off before placing the bites back onto the parchment paper. If desired, drizzle with salted caramel immediately.
Look for The chocolate shell should harden within seconds of touching the cold cheesecake.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Work in small batches and keep the remaining bites in the freezer until ready to dip.

Each bite should be fully coated with a thin, even layer of chocolate that hardens within seconds. The finished bites should look uniform and feel structurally sound. If you are adding a drizzle of salted caramel, do so immediately after dipping so it adheres to the chocolate shell before it fully sets into a crisp, finished dessert.

Common mistakes

A common mistake is failing to freeze the cheesecake cubes long enough, which leads to the cubes sliding off the sticks when dipped into the warm chocolate. Another error is leaving the chocolate on the heat for too long, which can cause the cocoa butter to separate and the mixture to become grainy.

Ensure the chocolate is just melted and remove it from the heat immediately. Finally, do not overcrowd the tray during the freezing phase, as this prevents even airflow and may result in unevenly frozen bites.

How to tell it’s done

The cheesecake is ready to be dipped when it feels firm and cold to the touch, having spent at least forty-five minutes in the freezer. Once dipped, the chocolate shell should set almost instantly, appearing matte or glossy depending on the cocoa content, and should feel hard and crisp.

The internal temperature of the cheesecake center, which contains eggs, should reach 160°F (71°C) to ensure safety, although the freezing process primarily serves to solidify the structure for handling.

  • Egg dishes: 160°F (71°C) in the thickest part
