Before you start

Before beginning the assembly, ensure the chocolate cake layers are fully cooled if they were baked recently. Chill the mixing bowl and beaters for the coconut cream for at least 15 minutes to ensure maximum volume.

Prepare your workspace by gathering the offset spatula, cake stand, and all ingredients. Having everything within reach will help keep the cream cold and the assembly process efficient and clean throughout the entire preparation.

Ingredients at a glance (3)
  • 1 cake, 2 chocolate cake layers, store-bought or made ahead
  • 1 cup coconut cream, chilled and whipped
  • 1 cup dark chocolate cake crumbs

Instructions

Layering the base

  1. Prepare the layers
Place the first chocolate cake layer on a flat surface or cake stand. Ensure the surface is stable to prevent the cake from sliding during the assembly process.
Look for The cake base should be level and firm.
Tip Use a cake board underneath for easier handling if transferring later.

The first layer of chocolate cake should be positioned securely on the cake stand. It must be perfectly flat and centered to provide a stable foundation for the filling. Check that the edges are clean and that the surface is free of loose debris before proceeding to the next stage of the assembly.

Spreading the coconut filling

  1. Fill with coconut cream
Spread a generous, even layer of the chilled coconut cream over the first cake layer using an offset spatula. Place the second cake layer on top and press down gently to secure the filling. If using a custard-based cream, ensure it is heated to 160°F (71°C) to ensure the eggs are cooked through.
Look for The cream should be smooth and reach the edges without spilling over significantly.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Keep the coconut cream cold so it holds its shape perfectly between the layers.

The coconut cream should be spread in an even, thick layer that reaches just to the perimeter of the cake. When the second layer is placed on top, the cream should remain stable and not ooze out excessively. The assembly should feel balanced and firm, ready for the final crumb coating application.

Applying the crumble

  1. Apply chocolate crumble
Coat the exterior of the cake completely with the dark chocolate crumbs, pressing them gently into the sides and top. Serve immediately or chill for a firmer texture.
Look for The cake should be fully covered in crumbs for a uniform, rustic appearance.
Tip Use your hands or a small spatula to pat the crumbs firmly into the cream.

The exterior of the cake should be entirely encased in the chocolate crumbs, creating a uniform, dark, and textured surface.

The cake should look complete and elegant, with no visible gaps in the crumb coverage. The final product should be ready for immediate slicing or a brief period of chilling before serving.

Common mistakes

Avoid using warm cake layers, as this will cause the coconut cream to lose its structure and slide, leading to an unstable final dessert. Do not over-mix the coconut cream, as this can cause it to lose its light, airy texture and become greasy.

Ensure the crumbs are applied uniformly; missed spots will expose the cream and detract from the visual appeal. Work quickly to keep the cream chilled.

How to tell it’s done

The cake is considered ready once the coconut cream is firmly set between the layers and the exterior is completely covered in the chocolate crumble.

The eggs in the cream must reach an internal temperature of 160°F (71°C) to be considered fully cooked. The structure should feel stable to the touch, and the crumb coating should appear consistent across the entire surface of the dessert.

  • Egg dishes: 160°F (71°C) in the thickest part
