Tips for success
For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the sauce during the last 30 minutes of cooking. Let it bubble and thicken before serving.
If you prefer a spicier dish, add extra minced chipotle peppers or a pinch of cayenne. For a smoky twist, use smoked paprika in place of some of the chipotle.
This dish is incredibly versatile. Serve it over rice, quinoa, or cauliflower rice for a low-carb option. Use it as a filling for tacos, burritos, or quesadillas.
Top with fresh cilantro, diced red onion, or a squeeze of lime for brightness. The leftovers are even better the next day as the flavors continue to meld.
Variations
- Mango Chipotle Chicken: Replace the pineapple tidbits with drained mango chunks or a 20-ounce can of mango slices, chopped. The mango adds a tropical sweetness that pairs beautifully with the smoky chipotle and creamy cheese.
- Spicy Pineapple Chicken: Increase the chipotle peppers to 4-5 tablespoons and add a minced jalapeño for extra heat. For a smoky kick, stir in 1 teaspoon of smoked paprika along with the chipotle.
- Creamy Cilantro-Lime Chicken: After cooking, stir in the juice of 1 lime and 1/2 cup chopped fresh cilantro. The bright, fresh flavors cut through the richness and add a vibrant finish to the dish.
- BBQ Pineapple Chicken: Swap the chipotle peppers for 1 cup of your favorite barbecue sauce and reduce the queso blanco to 1/2 cup. This creates a sweeter, tangier sauce that's a family favorite.

Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of chicken broth or water if the sauce has thickened too much. The dish also freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
This recipe is perfect for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
You can also cook the chicken ahead, shred it, and store it in the sauce in the refrigerator for up to 4 days. Reheat gently before serving.
Serving ideas
Serve this chipotle pineapple chicken over a bed of fluffy Mexican rice, with warm tortillas on the side for scooping. A crisp green salad with avocado and lime vinaigrette balances the richness. For a casual gathering, set up a taco bar with toppings like shredded lettuce, pico de gallo, and sour cream.
For a fun presentation, serve the chicken in individual bowls with tortilla chips for dipping. Garnish with fresh cilantro, a dollop of sour cream, or sliced jalapeños for extra heat.
This dish is hearty enough to stand alone, but also pairs well with refried beans or grilled corn. Enjoy it warm, straight from the slow cooker.

Chipotle Pineapple Chicken Thighs: Slow-Cooker Fiesta

Ingredients
- 6 boneless skinless chicken thighs (about 2 lb)
- 1 can (20 oz) pineapple tidbits in juice, drained
- 3 tbsp chipotle peppers in adobo sauce, minced
- 1 cup queso blanco dip
- 1 cup shredded pepper jack cheese
Instructions
- Place the boneless skinless chicken thighs in an even layer in the bottom of a 6-quart or larger slow cooker. Scatter the drained pineapple tidbits over the chicken. Spoon the minced chipotle peppers in adobo sauce over the pineapple, distributing as evenly as possible. Pour the queso blanco dip over the top, then sprinkle with the shredded pepper jack cheese. Do not stir; the layers will meld as they cook.
- Cover the slow cooker with its lid. Cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is tender and cooked through. The sauce will bubble and thicken slightly as the cheeses melt and meld with the pineapple and chipotle.
- Once the chicken is cooked through and registers 165°F (74°C) on an instant-read thermometer, use two forks to shred the thighs directly in the slow cooker. Stir the shredded chicken into the sauce so every piece is coated with the sweet, smoky, cheesy mixture.
- If the sauce seems thin, let the shredded chicken sit in the slow cooker on the WARM setting, uncovered, for 10 to 15 minutes. This allows excess moisture to evaporate and the sauce to thicken to a glossy, clinging consistency. Stir occasionally.
- Spoon the pepper jack chipotle pineapple chicken over warm tortilla chips, into tacos, or alongside Mexican rice. Garnish with fresh cilantro or sliced jalapeños if desired, though the dish is delicious as is. Serve immediately while hot and bubbling.
