Before you start

Before beginning the assembly, ensure the oven is fully preheated to 350°F (175°C). Have all ingredients measured out and within reach, as the layering process happens quickly.

If the caramel sauce is stored in the refrigerator, bring it to room temperature or warm it slightly to ensure it pours without tearing the delicate oat base. Prepare the baking dish by lightly greasing it if desired, although the buttery nature of the oat mixture is usually sufficient.

Ingredients at a glance (3)
  • 4 cups rolled oats
  • 1 cup caramel sauce
  • 1 cup dark chocolate chips

Instructions

Crust Formation

  1. Prepare the Base
Preheat the oven to 350°F (175°C). Press two-thirds of the oat mixture firmly into the bottom of a 9x13 inch baking dish to create an even, compact crust layer.
Look for The crumbs should cover the entire base of the dish and be pressed down firmly so they hold together during the baking process.
Tip Use the back of a measuring cup to help press the oats into the corners of the pan for a uniform thickness.

The base should be a solid, uniform layer of oat crumbs that covers the entire bottom of the pan. It should feel firm to the touch and not have any gaps or loose patches that might allow the caramel to seep through to the bottom of the dish during the baking process.

Filling Assembly

  1. Assemble the Filling
Pour the caramel sauce evenly over the pressed oat base. Distribute the dark chocolate chips across the caramel layer, ensuring they are spread out to cover the surface.
Look for The caramel should form a smooth, glossy layer across the oats, and the chocolate chips should be evenly distributed without piling up in one spot.
Tip Warm the caramel sauce slightly if it is too thick to pour easily, as this helps it spread more smoothly without disturbing the oat base.

The caramel should be distributed in an even layer that reaches almost to the edges of the dish. The chocolate chips should be scattered uniformly across the caramel, creating a consistent layer that ensures every section of the bar will contain a balanced amount of chocolate once it is baked.

Baking and Topping

  1. Top and Bake
Sprinkle the remaining oat mixture over the chocolate layer. Place the dish in the preheated oven and bake until the edges are golden and bubbling, approximately 25 minutes.
Look for The edges should be bubbling and golden brown, and the top layer of oats should appear toasted and slightly crisp.
Tip Allow the bars to cool completely in the pan before cutting to ensure the caramel sets and the bars hold their shape.

The final topping of oats should be sprinkled lightly over the chocolate.

Upon completion of the bake, the entire surface should appear golden and toasted, with the caramel bubbling at the edges, indicating that the heat has successfully penetrated the middle of the bars and melted the chocolate.

Common mistakes

Avoid pressing the oat base too thin, as it may crumble when sliced. Conversely, ensure the top layer of oats is not piled too heavily, or it may prevent the chocolate from melting properly.

Be careful not to overbake, as the caramel can become too firm once cooled. If the edges darken too fast, tent the dish with foil for the final few minutes of the cooking time.

How to tell it’s done

The bars are done when the edges appear golden brown and the caramel is bubbling vigorously around the perimeter of the dish. The top layer of oats should look toasted and slightly crisp to the touch.

Because there are no raw proteins involved, the visual cues of a bubbling filling and golden edges are the best indicators that the bake is complete and the flavors have properly developed.
