Tips for success
For the best texture, don't rush the cooking. Low and slow is the way to go—7 to 8 hours on low will give you the most tender, fall-apart ribs.
If you're short on time, high for 4 to 5 hours works, but the meat may be slightly less tender. Let the ribs rest in the sauce for 10 minutes before serving so the juices can redistribute.
If you have leftover sauce, it's fantastic over rice, mashed potatoes, or even roasted vegetables. The sauce will thicken as it cools; you can thin it with a splash of water or cola when reheating.
For a thicker, more concentrated glaze, simmer the sauce on the stovetop for 5–10 minutes after the ribs are done.
Variations
- Smoky Chipotle: Add 2 chipotle peppers in adobo sauce to the slow cooker along with the BBQ sauce for a smoky, spicy kick. Reduce the cherries to 1 1/2 cups to balance the heat.
- Balsamic Cherry: Swap the cola for 1/2 cup balsamic vinegar and 1/2 cup water, and use a garlic-heavy BBQ sauce. The vinegar adds a tangy depth that pairs beautifully with the cherries.
- Spicy Ginger: Stir 2 tablespoons grated fresh ginger and 1 teaspoon red pepper flakes into the BBQ sauce. Add an extra 1/4 cup cola to keep the sauce loose.
- Honey Mustard: Replace the molasses garlic BBQ sauce with a honey mustard BBQ sauce. Add 1/4 cup Dijon mustard and 1/4 cup honey to the slow cooker for a sweet-tangy twist.

You can assemble the entire dish the night before—place the ribs, cherries, cola, and BBQ sauce in the slow cooker insert, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. This is a great make-ahead option for busy days or entertaining.
Serving ideas
Serve the short ribs over creamy mashed potatoes, polenta, or buttered egg noodles to soak up the rich sauce. A side of roasted green beans or a crisp green salad with a tangy vinaigrette balances the sweetness. Garnish with fresh thyme or chopped parsley for a pop of color.
For a more casual meal, pile the shredded meat onto soft rolls with a spoonful of sauce and a few pickled onions. The ribs also work well as a filling for tacos or a topping for nachos. Leftover sauce can be served on the side for extra drizzling.

Cherry Cola Molasses Beef Short Ribs: One-Pot Slow Cooker

Ingredients
- 5 lb bone-in beef short ribs, English-cut
- 2 cups pitted dark sweet cherries
- 1 cup cola (not diet)
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the beef short ribs in the slow cooker insert, arranging them in a single layer as much as possible. If they overlap, that's fine—they'll shrink as they cook.
- Scatter the pitted dark sweet cherries evenly over the ribs. They will break down during cooking, creating a sweet-tart base for the sauce.
- Pour the cola down the side of the slow cooker, avoiding pouring directly over the ribs to keep the rub in place. The cola will help deglaze and add a subtle caramel note.
- Drizzle the molasses garlic BBQ sauce in thick ribbons over the ribs and cherries. Use a spoon to spread it gently so the ribs are mostly coated.
- Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the meat is fork-tender and pulls away from the bone easily. Avoid opening the lid during the first few hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- Insert a fork into the thickest part of a rib. The meat should be very tender and start to pull away from the bone. If it's still tough, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the liquid for 10 minutes. This allows the juices to redistribute and makes them easier to handle.
- Using tongs or a carving fork, carefully lift the ribs out of the slow cooker and place them on a serving platter. Spoon some of the reduced cherry-cola sauce over the top.
