Tips for success

For a deeper caramelized crust, after slow cooking, transfer the ribs to a baking sheet lined with foil and brush with some of the reduced sauce.

Broil for 3–5 minutes, watching closely, until the edges are charred and sticky. This step is optional but adds a nice texture contrast.

If you have extra time, make the sauce ahead by simmering the cherries, cola, and BBQ sauce in a saucepan until thickened. Then use it as a finishing glaze. This can also help if you prefer a thicker sauce—just reduce it further before serving.

Variations

  • Spicy Cherry Cola Ribs: Add 1–2 minced chipotle peppers in adobo sauce along with the BBQ sauce for a smoky heat. Or stir in 1 teaspoon of red pepper flakes before cooking. The sweetness of the cherries and cola balances the spice.
  • Cherry Cola Pulled Pork: Substitute a 3–4 lb pork shoulder for the ribs. Cook for 8–10 hours on low, then shred the meat and toss with the sauce. Serve on buns with coleslaw.
  • Bourbon-Infused Glaze: After cooking, remove the ribs and stir 2 tablespoons of bourbon into the sauce. Simmer on the stovetop for 5 minutes to cook off the alcohol, then brush over the ribs before serving.
  • Cherry Cola Ribs with Smoked Paprika: Rub the ribs with 1 tablespoon smoked paprika and 1 teaspoon garlic powder before adding to the slow cooker. This adds a deep, smoky layer that complements the sweet sauce.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze cooked ribs in a freezer-safe container with sauce for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat ribs in a 350°F (175°C) oven for 15–20 minutes, or in the microwave in 1-minute intervals until hot. Add a little water or cola to keep them moist.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. Keep the ribs in their sauce to retain moisture.

Reheat gently in the microwave or in a covered skillet over low heat, adding a splash of water or cola if the sauce has thickened too much.

You can assemble the ribs in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert into the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start. Alternatively, cook the ribs fully, then cool and refrigerate; reheat gently before serving.

Serving ideas

Serve the ribs whole or cut into individual pieces, with extra sauce spooned over the top. They pair beautifully with classic sides like coleslaw, cornbread, or a crisp green salad. The sweet-tangy flavor also works well with roasted potatoes or grilled vegetables.

For a casual gathering, set out the ribs on a large platter with plenty of napkins.

The cherries in the sauce add a festive touch, making this dish suitable for summer cookouts, game-day spreads, or holiday dinners. Leftover sauce can be served on the side for dipping.

Frequently asked questions

Can this recipe be made with boneless ribs?
Yes, boneless country-style ribs can be used, but they are leaner and may dry out if cooked too long. Reduce the cooking time to 4–5 hours on low, and check for tenderness earlier. The sauce will still be delicious.
What if the sauce is too thin at the end?
If the sauce hasn't reduced enough, remove the ribs and transfer the sauce to a saucepan. Simmer over medium heat for 5–10 minutes until thickened. You can also mix 1 tablespoon cornstarch with 2 tablespoons water and stir it in to thicken quickly.
Can this be made in an Instant Pot?
Yes, use the pressure cook function on high for 25 minutes, then natural release for 15 minutes. After that, remove the ribs and reduce the sauce on the sauté setting until thickened. The texture will be slightly different but still delicious.
How do you remove the membrane from the ribs?
Slide a butter knife under the membrane on the back of the rack, lift it, and grasp with a paper towel. Pull it off in one piece. This step is optional but helps the seasoning penetrate and makes the ribs easier to eat.
What can be used instead of cola?
Root beer or cherry soda can be substituted for cola. For a less sweet option, use apple juice or a combination of beef broth and a little brown sugar. Adjust the sweetness to taste.

Cherry Cola Maple Bourbon Baby Back Ribs

Slow cooker baby back ribs glazed with cherry cola maple bourbon sauce, garnished with cherries

Ingredients

  • 2 racks pork baby back ribs (about 2 lb each)
  • 1 1/2 cups pitted dark sweet cherries (fresh or frozen)
  • 1 cup cola
  • 1 1/2 cups maple bourbon barbecue sauce

Instructions

  1. Place the racks of pork baby back ribs side by side in the bottom of a 6-quart slow cooker. If needed, cut each rack in half so they fit in a single layer, overlapping slightly if necessary.
  2. Scatter the pitted dark sweet cherries evenly over the ribs. Pour the cola gently along the side of the slow cooker, avoiding pouring directly over the cherries to keep them in place.
  3. Pour the maple bourbon barbecue sauce generously over the ribs, covering as much surface area as possible. Do not stir; the sauce will blend with the cherries and cola as it cooks.
  4. Cover the slow cooker and cook on low for 6 to 8 hours, until the meat is tender and easily pulls away from the bone. Avoid opening the lid during cooking to maintain even heat. Let it rest for 3 minutes before slicing.
  5. After 6 hours, check the ribs by piercing the thickest part with a fork. The meat should be very tender and almost falling off the bone. If not, continue cooking for another 30–60 minutes. Let it rest for 3 minutes before slicing.
  6. Using a fork, carefully lift the ribs from the slow cooker onto a cutting board. Let them rest for at least 3 minutes before cutting. Serve warm with extra sauce from the slow cooker, if desired.
