Before you start

Before you begin cooking, it is important to have all your ingredients measured and ready to go. Preheat your oven to 375°F (190°C) so it reaches the correct temperature by the time assembly is finished.

Lightly grease a 9x13-inch baking dish. If you are using frozen cauliflower rice, make sure it is fully thawed and squeezed dry in a clean kitchen towel to remove all excess moisture.

Ingredients at a glance (4)
  • 1 1/2 lbs ground beef
  • 1 packet taco seasoning
  • 4 cups cauliflower rice, thawed and squeezed dry
  • 2 cups cheddar cheese, shredded and divided

Instructions

Searing and Seasoning the Beef

  1. Brown the Ground Beef
Add the ground beef to a large skillet over medium-high heat, breaking it up with a spatula as it cooks. Sauté for 6 to 8 minutes until the meat is completely browned and no pink remains. Drain any excess grease from the skillet.
Look for The beef should be fully browned with no pink visible.
Tip Use a wooden spoon or spatula to break the beef into uniform small crumbles.
  2. Season the Ground Beef
Sprinkle the taco seasoning over the browned beef and stir well to coat. Pour in a splash of water if needed to help distribute the spices. Cook for an additional 2 minutes until fragrant and the beef reaches an internal temperature of 160°F (71°C).
Look for The spices should smell highly fragrant.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip A splash of water helps dissolve the seasoning and coat the meat evenly.

By the end of this initial phase, the ground beef should be completely browned with no trace of pink remaining, and the kitchen should smell highly fragrant with Tex-Mex spices.

The meat will be coated in a glistening, flavorful glaze from the taco seasoning. Make sure the beef has reached a safe internal temperature of 160°F (71°C) before moving on to assembling the casserole layers.

Preparing the Spiced Cauliflower Rice

  1. Mix the Cauliflower Rice
In a medium mixing bowl, combine the squeezed-dry cauliflower rice with half of the shredded cheddar cheese. Stir in a pinch of salt and pepper to ensure the cauliflower is well-seasoned and the cheese is evenly distributed.
Look for The cheese should be evenly distributed throughout the cauliflower.
Tip Ensure the cauliflower rice is squeezed completely dry to prevent a watery casserole.

At this point, the cauliflower rice should be thoroughly combined with the spices and a portion of the shredded cheddar cheese. The mixture should look uniform, with the cheese evenly distributed throughout the grains. It will have a light, spiced aroma and a slightly cohesive texture, ready to form a sturdy, flavorful base layer at the bottom of your baking dish.

Assembling and Baking the Casserole

  1. Assemble the Layers
Spread the seasoned cauliflower rice mixture evenly into the bottom of the prepared baking dish, pressing down gently. Layer the seasoned ground beef over the cauliflower rice, then top with the remaining shredded cheddar cheese.
Look for The layers should be even and fully covered with the remaining cheese.
Tip Pressing the cauliflower rice layer down slightly helps it hold its shape when sliced.
  2. Bake Until Bubbly
Place the baking dish in the preheated oven and bake at 375°F (190°C) for 15 to 20 minutes. The casserole is ready when the cheese is fully melted, bubbling energetically around the edges, and starting to turn golden brown.
Look for Look for bubbling edges and golden brown spots on the melted cheese.
Tip Let the casserole rest for five minutes after baking to make slicing much easier.

The casserole is fully baked when the cheddar cheese on top is completely melted, bubbling vigorously around the edges of the dish, and starting to develop beautiful golden-brown spots. The entire kitchen will be filled with the rich aroma of toasted cheese and savory spices. Allow the casserole to rest for five minutes before slicing to let the layers set properly.

Common mistakes

One of the most common mistakes is failing to drain the excess fat from the ground beef after browning, which can result in a greasy, heavy casserole. Another frequent error is using cauliflower rice that is still wet.

If the moisture is not thoroughly squeezed out beforehand, the steam will pool at the bottom of the dish during baking, leading to a watery base instead of a tight, cohesive casserole.

How to tell it’s done

To check for perfect doneness, look for a bubbling perimeter and a deeply golden, melted cheese crust across the entire surface of the dish.

Because the ground beef is fully cooked to a safe internal temperature of 160°F (71°C) in the skillet before baking, the oven time is primarily focused on melting the cheese and heating the cauliflower through. A knife inserted into the center should come out piping hot.

  • Ground meat: 160°F (71°C) in the thickest part
