Before you start

Before beginning the cooking process, organize all ingredients and tools on the counter. Measure out the taco seasoning, and open the can of diced tomatoes. Grate the cheddar cheese if using a block.

Having everything prepped and within reach ensures a smooth, efficient assembly line once the beef is cooked. Preheat the oven so it is ready for baking, and ensure the baking dish is clean and dry.

Ingredients at a glance (5)
  • 1 1/2 lbs ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

Preparing the Savory Beef Filling

  1. Brown the Ground Beef
Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until it is completely browned and no pink remains. Carefully drain any excess grease from the skillet to prevent the casserole from becoming greasy during the baking process.
Look for The beef should be fully browned and crumbly.
Tip Use a lean ground beef to minimize the amount of grease that needs to be drained.
  2. Season and Simmer the Filling
Stir the taco seasoning and the can of diced tomatoes with their juices into the browned beef. Reduce the heat to medium-low and simmer the mixture for about 5 to 7 minutes, stirring occasionally, until the liquid has reduced and the beef is thoroughly coated in the rich, seasoned tomato sauce. Cook until the beef reaches a safe internal temperature of 160°F (71°C).
Look for The mixture should be thick and bubbling.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Let the tomatoes simmer down completely so the tortillas do not get soggy.

At the end of this phase, the ground beef should be fully browned, crumbly, and deeply aromatic.

The diced tomatoes and taco seasoning should have simmered down into a thick, rich sauce that clings to the meat, with very little loose liquid remaining in the bottom of the skillet.

Assembling the Layered Casserole

  1. Layer Tortillas, Beef, and Cheese
Preheat the oven to 375°F (190°C). Lay half of the corn tortillas in the bottom of a clear 9x13-inch glass baking dish, overlapping them slightly to cover the base. Spread half of the seasoned beef mixture evenly over the tortillas. Sprinkle half of the shredded cheddar cheese over the beef. Repeat the layers with the remaining tortillas, beef, and cheese.
Look for The layers should be evenly distributed across the dish.
Tip Press down gently on the layers to compact the casserole before baking.

At this stage, the glass baking dish should show clearly defined layers of corn tortillas, seasoned beef, and shredded cheddar cheese. The top layer should be completely covered in a generous, even blanket of cheese, ready to be melted in the oven.

Baking to Golden Perfection

  1. Bake and Rest
Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the cheese is completely melted, bubbling, and starting to turn golden brown around the edges. Remove the casserole from the oven and let it rest for 5 minutes. Slice the warm casserole into neat squares and serve immediately.
Look for The cheese should be golden and bubbling, and steam should rise when sliced.
Tip Letting the casserole rest before slicing helps the squares hold their shape.

The casserole is ready when the cheese on top is completely melted, bubbling vigorously, and showing golden-brown spots, especially around the edges. A metal spatula inserted into the center should feel hot, and steam should rise gently from the dish.

Common mistakes

One common mistake is failing to drain the excess grease from the ground beef after browning. Leaving too much fat in the pan will cause the tortillas to become soggy and greasy, ruining the texture of the casserole.

Another error is baking the dish immediately after assembly without letting the oven fully preheat. A hot oven is essential to melt the cheese quickly and brown the top before the tortillas overcook and lose their structural integrity.

How to tell it’s done

To ensure the casserole is perfectly cooked, check that the cheese is completely melted and bubbling throughout. The ground beef must reach a safe internal temperature of 160°F (71°C) during the simmering step.

When sliced, the squares should hold their shape reasonably well, displaying distinct, beautiful layers of corn tortillas, seasoned beef, and melted cheese. The edges should be slightly golden brown and caramelized.

  • Ground meat: 160°F (71°C) in the thickest part
