Tips for success

For an extra layer of texture, you can brown the hash browns slightly in a skillet with a little butter before mixing them with the soup and tomatoes.

This extra step adds a wonderful toasted potato flavor and guarantees a crisper texture throughout the casserole. If you prefer a more pronounced Tex-Mex flavor profile, consider adding a teaspoon of ground cumin or chili powder directly into the potato mixture.

Always shred your own cheese from a block rather than buying pre-shredded packages. Pre-shredded cheese is coated with starch to prevent clumping, which interferes with its ability to melt smoothly.

Freshly grated cheddar will melt into a luxurious, velvety blanket that stretches beautifully when lifted, enhancing both the presentation and the mouthfeel of the final dish.

Variations

  • Spicy Jalapeño Casserole: Add diced fresh jalapeños to the ground beef mixture and use pepper jack cheese in place of the cheddar for an extra kick of heat.
  • Vegetarian Black Bean Casserole: Swap the ground beef for two cans of rinsed black beans and add a cup of sweet corn to the potato mixture.
  • Bacon and Ranch Twist: Stir a packet of ranch seasoning into the potato mixture and top with crumbled cooked bacon along with the cheddar cheese.

Storage and make-ahead

Fridge
Store covered in the refrigerator for up to 3 to 4 days. Ensure it cools for no more than 2 hours before refrigerating.
Freezer
Freeze the assembled, unbaked casserole or baked leftovers for up to 3 months. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat individual portions in the microwave for 1-2 minutes, or warm the entire dish in a 350°F (177°C) oven, covered with foil, for 15-20 minutes.

Allow any leftover casserole to cool completely at room temperature for no more than two hours before storing. Cover the baking dish tightly with aluminum foil or transfer the leftovers to an airtight container. Store in the refrigerator for up to three to four days. For longer storage, freeze individual portions in freezer-safe containers.

This casserole is an excellent candidate for meal prep. Assemble the entire dish up to the point of baking, cover it tightly with plastic wrap, and store it in the refrigerator for up to 24 hours.

When ready to serve, remove the plastic wrap, cover with foil, and bake, adding about 10 minutes to the baking time to ensure it heats through completely.

Serving ideas

Serve this hearty casserole alongside a crisp green salad tossed with a light vinaigrette to balance the rich, cheesy flavors of the dish.

Traditional taco toppings also make excellent accompaniments: set out bowls of sour cream, fresh guacamole, sliced jalapeños, and salsa so everyone can customize their plate according to their personal preference.

For a festive family dinner, pair this casserole with tortilla chips and a warm black bean corn salad. The vibrant colors of the toppings and sides contrast beautifully with the golden cheese crust, making it as visually appealing as it is delicious. It is a complete, satisfying meal that requires very little extra effort to serve.

Frequently asked questions

Can frozen hash browns be used without thawing?
It is highly recommended to thaw them first. Excess moisture in frozen potatoes will make the cheese sauce watery and prevent the casserole from setting properly.
How is a soggy casserole avoided?
Thoroughly drain the cooked ground beef and squeeze out any excess moisture from the thawed hash browns before mixing them into the casserole.
Can this casserole be frozen after baking?
Yes, bake and let it cool completely, then wrap tightly in plastic wrap and foil. Freeze for up to three months and thaw overnight in the fridge before reheating.

Ingredients

  • 1 1/2 lb lean ground beef
  • 1 oz taco seasoning packet
  • 30 oz frozen shredded hash browns, thawed
  • 10.5 oz condensed cheddar cheese soup
  • 10 oz canned diced tomatoes and green chilies, undrained
  • 2 cups shredded cheddar cheese, divided
  • 3 green onions, sliced

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until it is fully browned and no pink remains. Drain any excess grease from the skillet.
  2. Reduce the heat to medium. Stir the taco seasoning into the browned beef. Simmer for 5 minutes, stirring occasionally, until the meat is thoroughly coated and seasoned. The ground meat must reach a safe internal temperature of 160°F (71°C) before proceeding.
  3. In a large mixing bowl, combine the thawed shredded hash browns, condensed cheddar cheese soup, undrained diced tomatoes and green chilies, and 1 cup of the shredded cheddar cheese. Stir until the potatoes are evenly coated.
  4. Spread the creamy potato mixture evenly into the bottom of the prepared 9x13-inch baking dish. Spoon the seasoned taco beef evenly over the potato layer, spreading it to the edges. Sprinkle the remaining 1 cup of shredded cheddar cheese over the beef.
  5. Bake uncovered in the preheated oven at 400°F (204°C) for 35 to 40 minutes. The cheese on top should be melted, golden, and bubbling around the edges.
  6. Remove the casserole from the oven and let it rest for 10 minutes to set. Garnish the top with the sliced green onions before slicing and serving.
