Tips for success
To get exceptionally clean slices that showcase the beautiful layers, use a very sharp knife and wipe it clean with a damp paper towel between cuts.
If the casserole is too hot, the cheese will run and the layers will slide, so do not skip the ten-minute resting period after baking. This brief rest allows the proteins and melted cheese to firm up just enough to hold their structure when sliced.
If you want to add an extra layer of flavor, you can stir some diced green chiles directly into the ground beef while it simmers. This quick step adds a delightful tang and subtle heat to the beef layers, helping them stand out even more against the rich, melted cheese without requiring any extra cooking time.
Variations
- Spicy Jalapeno Stack: Add diced pickled jalapenos to the ground beef layers and top with pepper jack cheese for an extra kick.
- Cheesy Herb Stack: Mix chopped fresh cilantro and green onions into the cheese layers for a fresh, herbal flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze the unbaked or baked casserole tightly wrapped in foil for up to 2 months. Thaw overnight in the fridge.
- Reheat
- Reheat individual slices in the microwave for 1 to 2 minutes, or warm the entire dish in a 350°F (175°C) oven for 15 minutes.
Allow any leftover casserole to cool completely at room temperature for no more than two hours before storing. Transfer the leftovers to an airtight container, or cover the baking dish tightly with plastic wrap or aluminum foil, and place it in the refrigerator. Properly stored, the casserole will remain fresh and delicious for up to three to four days.
You can easily assemble this entire casserole a day in advance. Prepare all the layers up to the final cheese topping, cover the dish tightly with plastic wrap, and store it in the refrigerator overnight.
When you are ready to serve, remove the wrap, let the dish sit at room temperature for twenty minutes, then bake as directed, adding five minutes to the baking time.
Serving ideas
Present this towering casserole family-style right out of the baking dish, letting everyone admire the golden, bubbly cheese top before you slice into it.
Serve each tall, layered square on a flat plate to showcase the beautiful alternating layers of beef and melted cheese. The vibrant colors of the fresh lettuce and bright red tomatoes on top make for an eye-catching presentation.
To round out the meal, serve the slices alongside a crisp side salad dressed with a simple lime vinaigrette, or with a side of Mexican rice and refried beans.
You can also set out extra bowls of sliced jalapenos, chopped cilantro, and hot sauce at the table, allowing your guests to customize their portions with additional texture and heat according to their personal preferences.

Cheesy Taco Lasagna Casserole Stack

Ingredients
- 1 1/2 lb ground beef
- 1 oz taco seasoning
- 2 1/2 cups shredded Mexican blend cheese
- 1 cup shredded lettuce, for serving
- 1/2 cup chopped tomatoes, for serving
- 1/2 cup sour cream, for serving
Instructions
- Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until it is thoroughly browned and no pink remains, which takes about 6 to 8 minutes. Carefully drain any excess grease from the skillet to prevent the casserole from becoming oily.
- Stir the taco seasoning into the browned beef in the skillet. Reduce the heat to low and let the mixture simmer gently for 5 minutes, stirring occasionally, until the spices are fully incorporated and coat the beef. Ensure the ground beef reaches a safe internal temperature of 160°F (71°C).
- Spread half of the seasoned ground beef evenly across the bottom of the baking dish. Sprinkle half of the shredded Mexican blend cheese over the beef. Repeat with the remaining beef and top with the rest of the cheese to create distinct, rich layers.
- Place the assembled baking dish in the preheated oven at 375°F (190°C). Bake for 15 to 20 minutes until the cheese on top is completely melted, bubbling vigorously at the edges, and starting to brown. Remove from the oven and let it rest on a wire rack for 10 minutes to set.
- Garnish the top of the rested casserole evenly with the shredded lettuce, chopped tomatoes, and dollops of fresh sour cream. Slice into generous squares using a sharp knife and serve immediately while warm.
