Tips for success
For the best sear, pat the chicken dry with paper towels before seasoning. This helps the spices stick and promotes browning. Use a heavy-bottomed skillet, like cast iron, to distribute heat evenly and achieve a nice char on the vegetables.
Don't skip the resting time after baking—it allows the cheese to set slightly, making it easier to serve.
When drizzling the chipotle sauce, use a spoon to create a decorative pattern. Serve with extra lime wedges on the table so everyone can add their own squeeze of fresh citrus.
Variations
- Beef Taco Boat: Substitute ground beef for the chicken. Brown the beef with the spices, then add the vegetables and continue as directed. Adjust cooking time to ensure beef is cooked through to 160°F (71°C).
- Veggie Taco Boat: Omit the chicken and use extra bell peppers, zucchini, and black beans. Increase the vegetables to 3 cups total and skip the searing step for the protein. Bake as directed, ensuring vegetables are tender.
- Spicy Chipotle: Add 1-2 minced chipotle peppers in adobo to the chicken mixture for extra heat. Use pepper jack cheese instead of the Mexican blend for an even spicier kick.
- Breakfast Taco Boat: Swap the chicken for scrambled eggs and use breakfast sausage instead. Cook the sausage, then add the vegetables and eggs; bake with cheese until eggs are set. Serve with salsa.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container for up to 3 days. Reheat in a skillet or microwave until hot and cheese is melted.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge and reheat in a skillet or oven.

- Reheat in a skillet over medium heat, covered, until hot and cheese is melted. Alternatively, microwave in 30-second bursts, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The cheese will firm up when cold, but reheating in the microwave or a skillet will bring back the gooey texture.
For best results, reheat in a skillet over medium heat, stirring occasionally, until hot and bubbly.
You can season the chicken and chop the vegetables up to a day ahead. Keep them in separate containers in the refrigerator. When ready to cook, follow the recipe as written.
The assembled skillet can also be prepared up to the point of baking, covered, and refrigerated for a few hours; then bake as directed, adding a few extra minutes if starting from cold.
Serving ideas

A side of Mexican rice or a simple green salad with lime vinaigrette rounds out the meal nicely.
For a festive presentation, set the skillet in the center of the table and let everyone serve themselves. Garnish with extra cilantro and lime wedges. This dish is also great for casual gatherings, as it's hearty, flavorful, and easy to portion out.

Cheesy Taco Boat Skillet with Chipotle Drizzle

Ingredients
- 1 lb cubed chicken breast
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp Cajun seasoning
- 2 cloves garlic, minced
- Salt, to taste
- 1 tbsp oil
- 1 cup diced bell peppers
- 1/2 cup sweet corn
- 1/2 cup red onions, diced
- 2 cups shredded Mexican cheese blend
- Creamy chipotle sauce, for drizzling, to taste
- Chopped cilantro, for garnish, to taste
- Lime wedges, for serving
Instructions
- In a mixing bowl, combine the cubed chicken breast with smoked paprika, garlic powder, black pepper, Cajun seasoning, minced garlic, and salt. Toss until every piece is thoroughly coated with the spice mixture.
- Heat the oil in a large skillet over medium-high heat until shimmering. Add the seasoned chicken in a single layer and sear without stirring too often, allowing the cubes to brown on all sides, about 4 minutes.
- Add the diced bell peppers, sweet corn, and red onions to the skillet. Continue to cook, stirring occasionally, for 6 minutes until the vegetables are charred at the edges and the chicken is cooked through.
- Preheat the oven to 400°F (200°C). If your skillet is oven-safe, leave the chicken mixture in it; otherwise transfer to a baking dish. Sprinkle the shredded Mexican cheese blend evenly over the top.
- Place the skillet in the oven and bake for 10 minutes, until the cheese is fully melted, bubbling, and golden in spots.
- Remove the skillet from the oven. Drizzle generously with creamy chipotle sauce, sprinkle with chopped cilantro, and serve with lime wedges on the side for squeezing over the top.
