Before you start

Before beginning, ensure all ingredients are measured and ready to use. Preheat your oven to 400°F (200°C) so that it is fully heated by the time the assembly is complete. Prepare your workspace by lightly dusting it with flour to prevent the dough from sticking.

Having your cooked sausage and measured cheeses ready will make the assembly process smooth and efficient, allowing you to focus on achieving a tight roll and a secure seal for your stromboli.

Ingredients at a glance (6)
  • 1 lb stromboli dough, store-bought or made ahead
  • 1/2 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1/2 lb sausage, casings removed
  • herbs, for serving

Instructions

Preparing the filling

  1. Prepare the filling
In a skillet over medium heat, cook the sausage until browned and fully cooked through. Ensure the sausage reaches an internal temperature of 160°F (71°C) to be safe for consumption. Drain any excess fat and set the meat aside to cool slightly before assembling.
Look for The meat is browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Break the sausage into small crumbles as it cooks for even distribution.

The sausage should be browned, crumbly, and fully cooked. Ensure the fat is drained well so the filling is not too greasy. It should have a savory, seasoned aroma that fills the kitchen. Once cooked, let it rest briefly so it does not melt the cheese prematurely during the assembly phase.

Assembling the roll

  1. Assemble the stromboli
Preheat your oven to 400°F (200°C). Roll out the stromboli dough on a floured surface into a large rectangle. Spread the marinara sauce evenly over the dough, leaving a small border at the edges. Layer the cooked sausage, pepperoni slices, and shredded mozzarella cheese over the sauce. Roll the dough tightly, tucking in the ends to seal the filling inside.
Look for The dough is rolled into a tight log with sealed edges.
Tip Use a little water on your fingers to help seal the dough edges tightly.

The dough should be rolled into a consistent, even rectangle. The sauce should be spread thinly, and the cheese and meats should be distributed evenly across the surface. Ensure the roll is tight, as loose rolls will result in pockets of air and an uneven bake that could collapse when sliced.

Baking until golden

  1. Bake and serve
Place the stromboli seam-side down on a parchment-lined baking sheet. Sprinkle the top with herbs. Bake for 20 to 25 minutes until the crust is golden brown and the cheese is bubbling. Remove from the oven and let it rest for 5 minutes before slicing with a spatula to enjoy the warm, cheesy interior.
Look for The crust is golden brown and the cheese is melted.
Tip Allowing it to rest prevents the filling from spilling out when sliced.

The final product should be golden brown on the top and sides, with a crisp, firm texture. The cheese should be fully melted and slightly oozing from the edges.

The aroma of baked bread and toasted pepperoni should be prominent, indicating that the stromboli is ready to be removed from the oven.

Common mistakes

A common mistake is overfilling the dough, which can lead to leaks and a soggy crust. Keep the layers relatively thin and leave at least an inch of clean dough around the edges to ensure a proper seal.

Another error is failing to seal the ends of the roll; always tuck the ends underneath the main body of the stromboli. Finally, avoid slicing the stromboli immediately after removing it from the oven, as the hot, molten cheese will spill out.

How to tell it’s done

The stromboli is done when the crust is a deep, golden brown and feels firm to the touch. The cheese should be bubbling and slightly browned in any areas where it might have peeked through.

Using an instant-read thermometer to check the center of the sausage-filled portion ensures it has reached a safe internal temperature of 160°F (71°C). Let the loaf rest for at least five minutes, which allows the cheese to set slightly, making for cleaner, more beautiful slices.
