Tips for success
For the best cheese pull, use fresh mozzarella that you shred yourself—it melts more smoothly than pre-shredded varieties. Let the cheese sit in the hot sauce for a few seconds before stirring, so it has time to soften and become stretchy.
If you want an extra golden top, you can briefly run the skillet under the broiler after tossing, but this is optional and not shown in the video.
To make the dish more substantial, you can add a handful of chopped mushrooms or bell peppers along with the beef, but keep the core ingredients as written for the authentic version.
If you prefer a spicier sauce, add a pinch of red pepper flakes with the seasonings. Always taste before serving and adjust salt, as the cheese and Parmesan add their own saltiness.
Variations
- Spicy Sausage Version: Swap the ground beef for 300 g of spicy Italian sausage (casings removed). Cook it the same way, breaking it up with a spoon. The sausage adds fennel and chili notes, so you can reduce the paprika if desired.
- Mushroom Medley: Add 200 g of sliced cremini mushrooms along with the beef. Sauté until they release their liquid and brown. This adds an earthy depth and stretches the dish to serve more people.
- Vegetarian Tomato Sauce: Omit the beef and increase the tomatoes to 8 whole vine tomatoes. Add a can of drained chickpeas for protein. Cook until the tomatoes break down, then proceed with the mozzarella and spaghetti.
- Creamy Tomato Twist: Stir in 1/4 cup of heavy cream along with the mozzarella for an extra-rich sauce. The cream mellows the tomato acidity and makes the sauce even more velvety. Reduce the salt slightly to balance the added richness.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of water when reheating to loosen the sauce.
- Freezer
- The sauce (without pasta) can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat individual portions in the microwave or in a skillet over medium heat, adding a spoonful of water to restore the saucy texture.
Leftovers can be refrigerated in an airtight container for up to 3 days. The sauce will thicken as it cools, so add a splash of water or broth when reheating to restore the creamy consistency. Store the pasta and sauce together for convenience, but note that the cheese may become less stretchy after refrigeration.
The sauce can be made up to 2 days ahead, but it's best to cook the spaghetti fresh and toss it just before serving. To make ahead, prepare the sauce, let it cool completely, and refrigerate in an airtight container.
When ready to serve, reheat the sauce in a skillet, add freshly boiled spaghetti, and toss with the mozzarella as directed.
Serving ideas
Serve the spaghetti immediately after tossing, while the cheese is still hot and stretchy. Twirl a generous portion into each bowl, then garnish with fresh basil leaves and a shower of grated Parmesan. A side of crusty bread or a simple green salad completes the meal, though the pasta is satisfying enough on its own.
For a family-style presentation, bring the skillet to the table and let everyone twirl their own portion. The cheese pull is most dramatic when the pasta is served straight from the pan.
Offer extra Parmesan and crushed red pepper flakes on the side for those who want more flavor. This dish pairs well with a light red wine or sparkling water with lemon.

Cheesy Spaghetti with Tomato Meat Sauce

Ingredients
- 5 whole vine tomatoes
- 300 g ground beef
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 100 g shredded mozzarella cheese
- 250 g boiled al dente spaghetti
- Fresh basil leaves, for garnish, to taste
- Grated Parmesan, for serving
Instructions
- Heat the extra virgin olive oil in a large skillet over medium-high heat. Add the whole vine tomatoes and ground beef. Cook, breaking up the beef with a wooden spoon, until the beef is browned and the tomatoes begin to soften and release their juices, about 3 minutes. Season with salt, black pepper, garlic powder, and sweet paprika. Stir to coat everything evenly. Cover the skillet with a lid and cook for 5 minutes, until the tomatoes are very soft and the sauce is bubbling.
- After covering, let the mixture simmer gently. The tomatoes will break down further, creating a chunky sauce. Stir once or twice to help the tomatoes release their liquid and blend with the seasoned beef. Continue cooking until the beef is fully cooked through and reaches an internal temperature of 160°F (71°C).
- Uncover the skillet. Scatter the shredded mozzarella cheese into the bubbling center of the sauce. Let it sit for a few seconds until it begins to melt, then stir gently to create gooey ribbons of cheese throughout the sauce. The cheese should be fully melted and glossy, not clumpy.
- Add the boiled al dente spaghetti to the skillet. Use tongs to toss the spaghetti with the sauce and melted cheese, coating every strand evenly. Continue tossing for 1 to 2 minutes until the pasta is well coated and the sauce clings to the noodles.
- Using chef tongs, twirl a generous forkful of the spaghetti into a neat nest and place it into a ceramic bowl. Repeat with the remaining pasta. Garnish with fresh basil leaves and serve immediately with extra grated Parmesan on the side.
