Tips for success

For the best caramelization, use a heavy-bottomed skillet and cook the onions over medium heat, stirring only occasionally. If they start to stick, add a tablespoon of water or broth to deglaze.

The onions are done when they are deeply browned and reduced to a jam-like consistency. This step cannot be rushed—low and slow is the way.

When stuffing the bread, use your fingers to gently open each cut and push the filling down. Be generous with the cheese; it will melt and create those beautiful stretches.

If the bread is very fresh and soft, let it sit out for a few hours to dry slightly—this helps it hold up to the filling and baking.

Variations

  • Herb and Garlic Butter: Add 2 tablespoons of chopped fresh parsley or chives to the garlic butter for a fresh, herbal note. You can also sprinkle the finished bread with extra thyme or rosemary before serving.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes to the garlic butter or sprinkle them over the cheese before baking. A drizzle of hot honey after baking adds a sweet-heat contrast.
  • Bacon Lover's: Crumble 4 slices of cooked bacon and mix into the caramelized onions before stuffing. This adds a smoky, savory depth that pairs beautifully with the cheese.
  • Mushroom and Onion: Sauté 8 ounces of sliced mushrooms with the onions during the last 10 minutes of caramelization. The mushrooms add an earthy flavor that complements the sweet onions and Gruyère.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 10 minutes to restore crispness.
Freezer
Freeze the assembled, unbaked bread for up to 2 months. Bake from frozen, adding 10 minutes to the covered bake time. Not recommended to freeze after baking.
Reheat
Reheat in a 350°F (175°C) oven for 10-12 minutes, or until hot and crispy. Avoid microwave to prevent sogginess.

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a 350°F (175°C) oven for 10 minutes, or until warm and crispy. Avoid microwaving, as it will make the bread soggy.

The caramelized onions can be made up to 3 days ahead and stored in the refrigerator. The garlic butter can also be prepared in advance.

Assemble the bread and keep it covered in the refrigerator for up to 4 hours before baking. Add a few extra minutes to the bake time if baking straight from the fridge.

Serving ideas

Serve this pull-apart bread warm, directly from the skillet, so everyone can pull off their own cheesy wedge.

It’s perfect as an appetizer for gatherings, alongside a bowl of soup, or as a indulgent side to a salad. The combination of sweet onions, garlic, and melted cheese is universally loved.

For a complete French onion experience, serve with a small bowl of extra caramelized onions on the side. The bread is best eaten fresh, but any leftovers can be repurposed into croutons for salads or soups. Pair with a crisp white wine or a light beer to balance the richness.

Frequently asked questions

Can this pull-apart bread be made ahead of time?
Yes, you can assemble the bread up to 4 hours ahead and keep it covered in the refrigerator. When ready to bake, add 5 minutes to the covered baking time. The caramelized onions can be made up to 3 days in advance and stored in the fridge.
What is the best bread to use for this recipe?
A round, crusty sourdough boule is ideal because it holds its shape and has a sturdy crust that stays crunchy. Other round artisan breads, like Italian or French loaves, also work well. Avoid soft sandwich bread, which will become soggy.
Why are your onions not caramelizing properly?
Caramelization requires low heat and time. If the heat is too high, the onions will burn before they turn sweet. Cook them over medium heat, stirring occasionally, and be patient—it should take about 25 minutes. Adding a splash of water can help if they stick.
Can this recipe be made gluten-free?
Yes, use a gluten-free round loaf that is crusty and sturdy. Gluten-free bread can be more delicate, so handle it gently when stuffing. The rest of the ingredients are naturally gluten-free, but check that your cheeses and butter are certified gluten-free.
How do you reheat leftovers without making them soggy?
Reheat in a 350°F (175°C) oven for 10-12 minutes, uncovered. This will crisp up the bread and melt the cheese. Avoid the microwave, as it will make the bread chewy and wet.

Cheesy Skillet French Onion Pull-Apart Garlic Bread

Golden pull-apart bread with melted cheese and caramelized onions in a cast iron skillet

Ingredients

  • 1 large crusty sourdough boule or round loaf
  • 3 large onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp fresh thyme leaves
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 cups shredded Gruyère cheese
  • 2 cups shredded low-moisture mozzarella cheese

Instructions

  1. Heat a large skillet over medium heat and melt 2 tbsp butter. Add the sliced onions and fresh thyme. Cook slowly, stirring occasionally, for 25 minutes until the onions are deeply caramelized, dark mahogany brown, and sweet. If they begin to stick, add a splash of water. Remove from heat and let cool slightly.
  2. In a small bowl, combine the softened butter, minced garlic, salt, and pepper. Mash with a fork until well blended. Set aside at room temperature.
  3. Place the sourdough boule on a cutting board. Using a serrated knife, cut a diamond cross-hatch grid into the bread, slicing about 1 inch apart and being careful not to cut through the bottom crust. The cuts should create a pattern of diamond-shaped wedges.
  4. Gently pry open each cut and spread the garlic butter inside every crevice. Stuff the caramelized onions evenly into the cuts, then push the shredded Gruyère and mozzarella into the openings, making sure the cheese reaches deep into the bread. Press the bread together gently to keep the filling in place.
  5. Place the stuffed bread in a cast iron skillet. Loosely cover with aluminum foil and bake at 375°F (190°C) for 15 minutes, until the bread is heated through and the cheese begins to melt.
  6. Remove the foil and switch the oven to broil. Broil for 3 minutes, watching closely, until the cheese is golden and bubbling and the bread edges are crunchy.
  7. Remove the skillet from the oven and let the bread rest for 5 minutes. Serve warm, pulling apart the wedges to reveal the molten cheese and sweet onions.
