Tips for success
For the best caramelized onions, use a large skillet with plenty of surface area. Crowding the pan will steam the onions instead of browning them.
If the onions start to stick, add a splash of water or broth to deglaze the pan. Patience is key—don't rush the process.
To get a perfect cheese pull, use a mix of Gruyère and provolone. Gruyère melts smoothly and has a nutty flavor, while provolone adds stretch.
Shred the cheese yourself from a block for better melting and flavor. Pre-shredded cheese often contains anti-caking agents that can affect melting.
Variations
- Spicy Version: Add a pinch of red pepper flakes to the onions while caramelizing, or use hot Italian meatballs. Top with sliced jalapeños before broiling for extra heat.
- Chicken Meatballs: Swap the beef meatballs for chicken meatballs. Cook them thoroughly to 165°F (74°C) and follow the same steps.
- Vegetarian Option: Use plant-based meatballs and vegetable broth instead of beef broth. Omit the Worcestershire sauce or use a vegan version. The rest of the recipe remains the same.
- Add Mushrooms: Sauté sliced mushrooms with the onions for an earthy flavor. Add them in the last 5 minutes of caramelizing.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a 350°F (175°C) oven for 5–7 minutes until hot and cheese is bubbly.
- Freezer
- Freeze the assembled (but not broiled) sub wrapped tightly in foil for up to 2 months.
- Reheat
- Reheat individual portions in a toaster oven or under the broiler for 2–3 minutes until the cheese is melted and the bread is crisp.
Store any leftover sub in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven to restore crispness. Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.
The caramelized onions can be made up to 3 days ahead and stored in the refrigerator. Reheat them in the skillet before assembling the sub. The meatballs can also be cooked and refrigerated, then reheated with the onions.
Serving ideas
Serve the sub hot, straight from the broiler, with extra caramelized onions on the side if you have any.
A simple green salad with a tangy vinaigrette balances the richness. For a heartier meal, pair it with crispy fries or a cup of French onion soup.
This sub is perfect for game day, casual dinners, or any time you crave comfort food. Cut it into individual portions and serve on a platter for easy sharing.
The cheese pull is the star—don't be shy about pulling the pieces apart dramatically.

Cheesy Skillet French Onion Meatball Sub with Melted Gruyère

Ingredients
- 1 large baguette (about 20 inches), split lengthwise
- 4 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 3 large yellow onions, thinly sliced
- 2 tbsp Worcestershire sauce
- 1/2 cup beef broth
- 12 pre-cooked beef meatballs (about 1 1/2 lbs)
- 1 1/2 cups shredded Gruyère cheese
- 1 cup shredded provolone cheese
Instructions
- Melt 2 tablespoons of the butter in a large cast-iron skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 20–25 minutes until deeply caramelized, dark brown, and jammy. Stir in the Worcestershire sauce and beef broth, scraping up any browned bits. Continue cooking for 2–3 minutes until the liquid reduces to a glossy glaze. Transfer the onions to a bowl and set aside.
- Wipe the skillet clean and add the remaining 2 tablespoons of butter. Heat over medium-high heat until shimmering. Add the meatballs in a single layer and sear for 2–3 minutes per side, turning occasionally, until browned all over. Pour the caramelized onions back into the skillet with the meatballs and toss to coat the meatballs in the onion glaze. Cook for 5–7 minutes, stirring, until the meatballs are heated through and the internal temperature reaches 160°F (71°C).
- Preheat the broiler to high. Split the baguette lengthwise and place cut-side up on a baking sheet. Mix the minced garlic with the remaining softened butter (if you used all the butter, soften an extra tablespoon) and spread the garlic butter over the cut sides of the baguette. Broil for 1–2 minutes until golden and toasted.
- Spoon the meatball-onion mixture evenly along the bottom half of the toasted baguette. Pile high with the caramelized onions. Sprinkle the shredded Gruyère and provolone evenly over the top, covering the meatballs completely.
- Place the assembled sub back under the broiler. Broil for 3–5 minutes, until the cheese is molten, blistered, and golden brown in spots. Keep a close eye to avoid burning.
- Remove the sub from the broiler and let it rest for 2 minutes. Use a sharp knife to slice the sub into individual portions, pulling apart to reveal the cheese stretch. Serve hot.
