Before you start

Before starting, take the cream cheese out of the refrigerator and let it soften at room temperature for about 30 minutes. Thinly slice the onions – aim for uniform slices so they caramelize evenly. Pick the thyme leaves from the stems and set aside.

Preheat the oven to 375°F (190°C) when you're ready to bake. Have all your ingredients measured and ready to go, and make sure you have an 8-inch cast iron skillet or similar oven-safe dish on hand.

Ingredients at a glance (14)
  • 3 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • 1 tbsp fresh thyme leaves, plus more for garnish
  • 200 g cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded Gruyère cheese, for topping
  • 1 baguette, sliced into 1/2-inch rounds
  • 1 clove garlic, halved
  • 2 tbsp olive oil, for brushing

Instructions

Caramelized Onions

  1. Caramelize the Onions
Heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions, brown sugar, and fresh thyme. Cook slowly, stirring occasionally, for about 30 minutes until the onions are deeply golden, jammy, and sweet. Reduce heat if they begin to brown too quickly.
Look for Onions are soft, dark mahogany in color, and have reduced significantly in volume.
Tip Be patient – low and slow is key for deep caramelization without burning.
  2. Cool the Onions Slightly
Remove the skillet from the heat and let the onions cool for about 5 minutes. This prevents the hot onions from melting the cream cheese too quickly when combined.
Look for Onions are warm but not steaming hot.
Tip Cooling briefly also helps the flavors meld.

After phase 1, the onions should be deeply browned, soft, and glossy, with a jammy texture. They will have reduced to about a third of their original volume. The kitchen will smell sweet and savory with hints of thyme and butter. The onions should be a rich mahogany color, not black or burnt. Let them cool slightly before proceeding to the next step.

Assemble and Bake

  1. Mix the Dip Base
In a mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Stir until smooth and well blended. Add the shredded Gruyère and grated Parmesan, then fold in the cooled caramelized onions.
Look for Mixture is creamy and evenly combined with no large lumps of cream cheese.
Tip Ensure the cream cheese is truly softened for a smooth texture.
  2. Assemble the Skillet Dip
Spread the dip mixture evenly into an 8-inch cast iron skillet. Smooth the top with a spatula. Sprinkle the remaining 1/2 cup shredded Gruyère over the top, covering the surface completely.
Look for Dip fills the skillet evenly and is blanketed with cheese.
Tip Use a small offset spatula for a smooth, even layer.
  3. Bake the Dip
Preheat the oven to 375°F (190°C). Place the skillet in the oven and bake for 20 minutes, until the dip is hot and bubbling and the top is golden brown with browned cheese blisters.
Look for The dip is bubbling at the edges and the cheese is deeply golden.
Tip If the top browns too quickly, tent loosely with foil.

The dip mixture should be smooth and creamy, with the caramelized onions evenly distributed. After baking, the top should be bubbling and golden brown with a few darker spots.

The edges will be set, but the center will still be soft. The aroma of melted Gruyère and caramelized onions will fill the kitchen. Let the dip rest for a few minutes before serving.

Crostini and Serve

  1. Toast the Crostini
While the dip bakes, arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil. Toast in the oven for 5-7 minutes, flipping once, until golden and crisp. Rub each warm crostini with the cut side of the garlic clove.
Look for Crostini are golden brown and crisp to the touch.
Tip Watch closely – they go from golden to burnt quickly.
  2. Garnish and Serve
Remove the dip from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves. Serve warm with the toasted baguette crostini for dipping.
Look for The dip is bubbly and fragrant with thyme and caramelized onions.
Tip Serve immediately while the cheese is molten and stretchy.

The crostini should be golden brown and crisp, with a slight give when pressed. The garlic rub adds a fragrant kick. When you dip a crostini into the dip, it should come out with a long, stretchy cheese pull. The dip should be warm and creamy, with a rich, sweet onion flavor and a nutty cheese finish. Garnish with fresh thyme for a pop of color.

Common mistakes

One common mistake is rushing the caramelization – cooking the onions over too high heat will burn them before they become sweet and jammy. Keep the heat at medium and stir often. Another pitfall is not softening the cream cheese enough, which leads to lumps in the dip.

Let it sit out for at least 30 minutes. Also, be careful not to overbake the dip – 20 minutes is usually perfect, but if your oven runs hot, check at 15 minutes. The top should be golden, not dark brown.

How to tell it’s done

The dip is done when it is hot and bubbling throughout, and the top is golden brown with darker spots of browned cheese. The edges should be bubbly and slightly set. If you insert a spoon, the dip should be molten and creamy, not runny.

The internal temperature should be at least 165°F (74°C) for food safety, though since there are no raw proteins, this is just a safety check. Let it rest for 5 minutes before serving – it will be extremely hot.
