Before you start

Before beginning, ensure all ingredients are measured and ready to go. Preheat your oven to 375°F (190°C) early so it is at the correct temperature when the assembly is complete.

Prepare a clean workspace, and ensure you have a large skillet and a 9x13 inch baking dish ready. Peeling and cubing the potatoes into uniform one-inch pieces will ensure they cook through at the same rate, resulting in a consistent final texture.

Ingredients at a glance (4)
  • 1 lb ground pork sausage, casings removed
  • 2 lbs potatoes, peeled and cubed
  • 2 cups prepared cheese sauce
  • 1 cup shredded cheddar cheese

Instructions

Preparation and Searing

  1. Prepare the components
Bring a large pot of salted water to a boil and cook the cubed potatoes until just tender, about 8 to 10 minutes. While the potatoes cook, heat a large skillet over medium-high heat and brown the sausage until fully cooked through, reaching 160°F (71°C). Drain the excess fat from the skillet.
Look for Sausage is browned and potatoes are tender
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the potatoes are cut into uniform cubes for even cooking.

The sausage should be deeply browned and fragrant, with no pink remaining. The potatoes should be soft enough to pierce with a fork but still firm enough to hold their shape. Ensure the excess fat is drained from the skillet to keep the final dish from becoming overly greasy, and make sure the potatoes are dry before moving to the assembly stage.

Assembly of the Dish

  1. Assemble the casserole
Preheat your oven to 375°F (190°C). Drain the potatoes well and add them to a large 9x13 inch baking dish. Add the browned sausage to the dish. Pour the cheese sauce over the top, ensuring that all the potatoes and sausage are evenly coated in the sauce. Stir gently to combine.
Look for Ingredients are evenly coated with sauce
Tip Spread the mixture out to ensure an even bake.

All components should be combined until the cheese sauce coats every piece of potato and sausage evenly. The mixture should look creamy and well-distributed in the baking dish. Check that there are no dry spots and that the sauce is reaching the bottom of the dish to prevent sticking and ensure a uniform texture throughout the casserole.

Baking to Perfection

  1. Bake until golden
Sprinkle the shredded cheddar cheese evenly over the top of the casserole. Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the sauce is bubbling around the edges and the cheese has melted into a golden-brown crust. Remove from the oven and let it rest for 10 minutes before serving.
Look for Cheese is bubbly and golden brown
Tip Watch the top carefully during the last few minutes to prevent burning.

The final phase is complete when the cheese is melted and bubbling across the entire surface. The crust should be golden brown, indicating the Maillard reaction has occurred.

Allow the dish to rest for 10 minutes to allow the sauce to set slightly, which makes serving much easier and ensures the flavors are well-integrated before you plate the meal.

Common mistakes

A common mistake is overcrowding the skillet when browning the sausage, which causes it to steam rather than sear. Work in batches if necessary to achieve that deep brown color.

Another error is not draining the potatoes well enough, which can lead to a watery sauce. Always ensure the potatoes are thoroughly drained in a colander before adding them to the baking dish to maintain the desired thickness of your cheese sauce.

How to tell it’s done

The casserole is done when the internal temperature is consistent throughout and the cheese crust is deeply golden and bubbling vigorously. You should see the sauce boiling along the edges of the dish, which indicates that the heat has penetrated the center of the casserole.

The potatoes should be fork-tender, and the sausage should be fully cooked, reaching an internal temperature of 160°F (71°C) to ensure food safety.
