Tips for success

To achieve an even crispier crust, lightly dust the parchment paper with cornmeal before placing the crust down. This creates a tiny air gap between the crust and the baking sheet, allowing heat to circulate underneath more effectively.

Additionally, you can prick the top of the stromboli with a fork a few times to allow steam to escape, preventing the crust from puffing up too much or cracking.

If you prefer a darker, more professional finish, you can brush the exterior with a beaten egg wash before baking. This gives the crust a glossy, deep brown appearance that looks excellent on the table. Be careful to only brush the top and sides, as egg wash on the bottom can cause it to stick to the parchment paper more than usual.

Variations

  • Spicy Pepperoni: Add crushed red pepper flakes over the mozzarella layer before rolling to bring an assertive heat that cuts right through the rich garlic butter.
  • Extra Herb Crust: Double the dried Italian herbs in the garlic herb butter glaze and sprinkle freshly grated parmesan over the top crust right after brushing.

Storage and make-ahead

Fridge
Keep in an airtight container in the refrigerator for up to 3 days.
Freezer
Wrap tightly in plastic wrap and foil; freeze for up to 1 month.
Reheat
Bake at 350°F (175°C) until the crust is crisp and the center is hot, about 10-15 minutes.

If you have leftovers, allow the stromboli to cool completely on a wire rack for no more than 2 hours before wrapping it tightly. Store it in an airtight container or wrap it in heavy-duty aluminum foil.

Keeping it airtight is the best way to prevent the crust from absorbing moisture from the air, which would cause it to turn soft or rubbery in the refrigerator.

You can assemble the stromboli up to 4 hours in advance and keep it in the refrigerator. If you do this, cover it loosely with plastic wrap to prevent the crust from drying out.

When you are ready to bake, remove it from the refrigerator and let it sit at room temperature for 20 minutes before placing it in the preheated oven. You may need to add 2-3 minutes to the total baking time.

Serving ideas

Serve the stromboli as the main course with a side of warm marinara sauce for dipping. The acidity of the tomato sauce perfectly cuts through the richness of the melted mozzarella and the savory pepperoni.

A simple green salad with a bright vinaigrette also makes an excellent accompaniment, adding a fresh, crisp element to balance the heartiness of the crust and cheese.

For a larger gathering, slice the stromboli into smaller, appetizer-sized pieces and arrange them on a wooden board. This makes it easy for guests to grab a piece. Ensure the dipping sauce is served in a warm bowl nearby, as the contrast between the hot, crunchy stromboli and the room-temperature or warmed sauce is a key part of the dining experience.

Frequently asked questions

Why is the bottom crust soggy?
A soggy crust is usually caused by excess moisture from the mozzarella or not baking the stromboli at a high enough temperature. Always use low-moisture mozzarella and bake on the center rack of a fully preheated oven.
How to prevent the cheese from leaking during baking?
Leaking occurs when the seam is not properly sealed or if the filling is packed too close to the edge. Leave a one-inch border around the edges and pinch the seams together very firmly before baking.
Can the baked stromboli be reheated in a microwave?
Reheating in a microwave is not recommended because it makes the crispy crust rubbery and soggy. Always reheat in a 350°F (175°C) oven or toaster oven for ten minutes to restore the original crunch.

Ingredients

  • 1 lb crust, store-bought or made ahead
  • 2 cups mozzarella, shredded
  • 1 cup pepperoni slices
  • 2 tbsp garlic herb butter, melted

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the crust on a sheet of parchment paper into a large, even rectangle. Spread the shredded mozzarella evenly over the rolled crust, leaving a clear one-inch border around all edges. Layer the sliced pepperoni evenly across the cheese. Starting from one long side, roll the crust tightly into a neat log, tucking in both ends and pinching the seams firmly to enclose the filling securely.
  2. Transfer the rolled stromboli on parchment paper to a baking sheet. Place the baking sheet on the center oven rack and bake for 20 to 25 minutes until the exterior turns an even, deep golden brown and the pepperoni reaches an internal temperature of at least 160°F (71°C). Remove the hot baking sheet from the oven and immediately brush the entire golden crust liberally with melted garlic herb butter.
  3. Transfer the baked stromboli onto a sturdy wooden board and let it rest undisturbed for 5 minutes. Use a sharp serrated knife to slice the warm stromboli into thick individual portions, cutting through the crisp exterior with gentle sawing motions without compressing the melted cheese. Serve each portion warm while the mozzarella remains molten and stretchy.
