Tips for success

To elevate the flavor profile of this comforting casserole, consider adding extra layers of texture and spice directly into the beef mixture. Stirring in a small can of drained diced green chiles, sliced black olives, or sweet corn kernels can add wonderful color and flavor contrast.

If a spicier dish is preferred, use pepper jack cheese in place of half the cheddar, or add a pinch of cayenne pepper to the beef while it cooks.

When preparing this dish for guests, individual oven-safe ramekins can be used instead of a large baking dish for a beautiful, personalized presentation.

Simply layer the ingredients in the exact same order within each ramekin and reduce the baking time by about five to ten minutes, keeping a close eye on the cheese to ensure it melts perfectly without burning the smaller surface area.

Variations

  • Spicy Jalapeño Casserole: Add diced fresh jalapeños to the beef mixture while browning, and swap the cheddar for pepper jack cheese to increase the heat.
  • Vegetarian Black Bean Casserole: Replace the ground beef with two cans of drained black beans and layer them with taco seasoning for a meatless version.

Storage and make-ahead

Fridge
Keep leftovers in an airtight container in the refrigerator for up to 3 days, placing a paper towel inside to absorb moisture.
Freezer
Freezing is not recommended for this dish because the tortilla chips will lose all texture upon thawing.
Reheat
Reheat portions in the oven at 350°F (175°C) for 10 to 15 minutes to restore some crispness, or microwave on high for 1 to 2 minutes until hot.

Store any leftover casserole in an airtight container in the refrigerator for up to three days. To preserve the remaining texture of the chips as much as possible, place a piece of dry paper towel directly over the top of the food before sealing the lid, which helps absorb excess condensation and prevents the topping from turning mushy.

The seasoned beef can be fully prepared up to two days in advance and stored in the refrigerator in a sealed container.

However, do not assemble the entire casserole with the chips ahead of time, as the chips will absorb moisture from the beef and become completely soggy before baking. For the best texture, always assemble the layers immediately before placing the dish in the oven.

Serving ideas

Serve this rich and savory casserole warm, straight from the baking dish to keep the cheese pull intact. It pairs beautifully with a fresh, crisp side salad tossed in a light vinaiginate to cut through the richness of the cheese and beef.

For a complete feast, offer a variety of cold toppings on the side, allowing everyone to customize their plate according to their own preferences.

Excellent topping options include a dollop of cool sour cream, fresh guacamole, diced tomatoes, sliced jalapeños, or a spoonful of zesty salsa. A squeeze of fresh lime juice over the top just before eating adds a bright, acidic lift that complements the deep, savory flavors of the seasoned beef and melted cheddar cheese perfectly.

Frequently asked questions

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3 cups nacho cheese tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • fresh chopped cilantro for serving

Instructions

  1. Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until it is completely browned and no pink remains, which takes about six to eight minutes. Drain any excess fat from the skillet to keep the casserole from becoming greasy.
  2. Reduce the heat to medium. Stir the taco seasoning directly into the browned beef. Cook and stir for about two minutes until the beef is evenly coated and highly fragrant. Ensure the beef reaches a safe internal temperature of 160°F (71°C).
  3. Preheat the oven to 350°F (175°C). Spread half of the crushed nacho cheese tortilla chips in an even layer at the bottom of your baking dish to create a crunchy foundation.
  4. Pour the seasoned beef mixture evenly over the layer of crushed chips. Sprinkle the shredded cheddar cheese and the remaining crushed chips over the top of the beef layer.
  5. Place the baking dish in the preheated oven. Bake for fifteen to twenty minutes, or until the cheddar cheese is completely melted, bubbly, and lightly golden brown around the edges.
  6. Remove the casserole from the oven and let it rest for five minutes. Sprinkle the fresh chopped cilantro over the hot, melted cheese before slicing and serving.
