Tips for success
For the crispiest chips, sprinkle half of them in the middle layer and reserve the other half to crush over the top before serving. This way, you get both a soft, casserole-like interior and a crunchy, golden topping.
If you like extra heat, add a sliced jalapeño or a dash of hot sauce to the beef while it simmers. You can also stir a handful of corn kernels or black beans into the beef mixture for extra texture.
To make the casserole even more decadent, use a combination of cheddar and Monterey Jack cheese, or add a layer of sour cream mixed with a little lime juice. For a smoky twist, use chipotle seasoning or add a teaspoon of smoked paprika to the beef.
If you have leftover taco fillings like sautéed peppers and onions, layer them in as well. The recipe is forgiving, so feel free to adapt it to what you have on hand.
Variations
- Chicken Taco Casserole: Replace the ground beef with shredded rotisserie chicken. Mix the chicken with taco seasoning and a little water, then layer as directed. Bake until hot and bubbly. This variation is lighter and cooks faster.
- Vegetarian Bean Casserole: Omit the ground beef and double the refried beans, or add a can of black beans. Increase the taco seasoning to keep the flavor bold. The casserole will be hearty and satisfying without meat.
- Spicy Chorizo Casserole: Swap the ground beef for fresh chorizo sausage. Cook the chorizo in the skillet, breaking it up, until browned. Proceed with the recipe as written. The chorizo adds a smoky, spicy depth.
- Breakfast Taco Casserole: Layer the casserole with scrambled eggs, cooked breakfast sausage, and hash browns. Use cheddar cheese and top with salsa and avocado. Bake until eggs are set and cheese is melted. Serve for brunch.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven until hot.
- Freezer
- Freeze the baked and cooled casserole for up to 3 months. Thaw overnight in the fridge and reheat in the oven at 350°F (175°C) until hot.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or the whole casserole in a 350°F (175°C) oven for 15-20 minutes.
Leftover taco casserole can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place a portion in the microwave for 1-2 minutes, or warm it in a 350°F (175°C) oven for about 10 minutes. The chips will soften upon reheating, but the casserole will still be delicious. For best results, reheat only the amount you plan to eat.
This casserole can be assembled up to 24 hours in advance. Prepare the beef and layer the casserole as directed, but do not bake. Cover the dish tightly with foil and refrigerate.
When ready to bake, remove the foil and bake at 375°F (190°C) for 30-35 minutes, or until hot and bubbly. You may need to add a few extra minutes since the casserole starts cold.
Serving ideas
Serve the taco casserole hot from the oven, scooped onto plates with a wide spatula. Top each portion with a dollop of sour cream, a spoonful of salsa, and a sprinkle of fresh cilantro.
For a complete meal, add a side of Mexican rice, a simple green salad, or some sliced avocado. The casserole is hearty enough to stand alone, but the toppings add brightness and creaminess that complement the rich beef and cheese.
This dish is perfect for casual dinners and potlucks. Set out a toppings bar with sour cream, salsa, guacamole, sliced olives, and jalapeños so everyone can customize their plate. It also pairs well with a cold beer or a citrusy margarita. Leftovers can be used as a filling for tacos or burritos the next day—just reheat and roll up in warm tortillas.

Loaded Taco Casserole: Easy Cheesy Weeknight Dinner

Ingredients
- 1 1/2 lb ground beef
- 1 oz taco seasoning
- 2/3 cup water
- 16 oz refried beans
- 4 cups coarsely crushed tortilla chips
- 2 cups shredded cheddar cheese
- 10 oz diced tomatoes with green chiles
- sour cream, for serving
- salsa, for serving
- chopped fresh cilantro, for serving
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 6-8 minutes. Drain any excess fat. Sprinkle the taco seasoning over the beef and stir in the water. Simmer for 3-4 minutes until the liquid thickens slightly. Remove from heat.
- Preheat the oven to 375°F (190°C). While the beef cooks, spread the refried beans in an even layer on the bottom of a 9x13-inch baking dish.
- Sprinkle half of the crushed tortilla chips over the beans. Spoon the seasoned beef evenly over the chips. Top with the diced tomatoes with green chiles, spreading them out. Sprinkle the shredded cheddar cheese over the top, covering the entire surface.
- Place the baking dish in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly and the edges are golden brown. The casserole should be hot throughout.
- Remove the casserole from the oven and let it rest for 5 minutes. This allows the layers to set and makes serving easier. Scoop onto plates and top with sour cream, salsa, and fresh cilantro as desired.
